Ingredients

  • 2 pounds Yukon gold potatoes ½ inch pieces
  • 1 pound chorizo sausage casing removed
  • 4 strips of bacon sliced
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 teaspoon coriander
  • 1 teaspoon cumin
  • ¾ teaspoon smoked paprika
  • 6 eggs whisked
  • 1 cup cheddar cheese shredded

  1. Turn the oven on to 375°F.
  2. When the potatoes are fork soft, place them in a big pot with 6 cups of water, bring to a boil, and then simmer for 6 to 8 minutes. Drain and set them aside.
  3. During the heating of the potatoes, preheat a sizable skillet over medium heat. Crisp the bacon as desired. Take out and place aside.
  4. In the bacon fat, combine the onion and the chorizo after removing the casing. Cook for 8 minutes or until no pink is visible. leaving the fat in the pan, remove it from the pan, and set it aside.
  5. The potatoes, spices, and garlic should all be added to the pan after increasing the heat to medium-high. To allow the potatoes to build a crust, cook until browned without tossing too frequently. Add the meat and stir.
  6. Eggs should be lightly scrambled in a small pan over medium heat while the potatoes are cooking. Eggs should be glossy and slightly undercooked. Place on top of the hash, then cover with cheese.
  7. Place in the oven and heat for about 5 minutes, or until cheese is melted and food is thoroughly heated.

Corn tortillas, sour cream, chopped tomatoes, green onions, jalapenos, shredded cabbage, guacamole, salsa, cheese, and cilantro—these are all optional toppings.
