In contrast to the frequently deep-fried form of this meal, this version is breaded, pan-fried in a small amount of oil, and then topped with tomato sauce and cheese. In the oven, the chicken has finished baking.

Making Chicken Parmesan

For flavor and texture, parmesan starts with crispy breaded chicken.

  1. To achieve consistent cooking, pound the chicken with a rolling pin or meat mallet to a thickness of 1/2 inch.
  2. You can chop extra-large chicken breasts in half before breading them.
  3. Before dipping into the breading/parmesan mixture and then the beaten eggs, pat dry.
  4. To aid in its adhesion, press the breading onto the chicken.

Ingredients

  • 4 chicken breast halves skinless boneless
  • ½ cup flour
  • 2 eggs
  • ⅔ cup Panko bread crumbs
  • ⅔ cup Italian Seasoning bread crumbs
  • ⅓ cup parmesan cheese grated
  • 2 tablespoons parsley
  • 4 tablespoons oil or as needed
  • 24 ounces marinara sauce homemade or jarred
  • 1 cup mozzarella cheese shredded
  • ¼ cup Parmesan cheese shredded
  • basil & parsley fresh, chopped

  1. Set the oven to 425 °F.
  2. Fill a small plate with flour. Put the eggs in a different dish (and beat with a fork).
  3. In a third shallow dish, mix Panko, Italian bread crumbs, grated parmesan, 2 tablespoons fresh parsley, and salt & pepper to taste.
  4. Chicken breasts should be pounded to a thickness of 1/2 inch; if they are particularly big, chop them in half.
  5. Chicken is dipped in flour and shaken to remove excess. Chicken should be dipped in beaten eggs, followed by bread crumbs.
  6. Heat the oil in a big pan. Chicken should be browned for four minutes on each side, or until golden (it does not need to cook through as it will continue to cook in the oven).
  7. In a 9×13 dish, spread 1 1/2 cups of marinara sauce out on the bottom. Chicken that has been browned should be added. Add a few tablespoons of marinara sauce, mozzarella, and parmesan cheese to the top of each slice.
  8. Chicken should be brown and bubbling after 20 to 25 minutes of baking at 165F. Pasta should be served with fresh herbs on top.
