INGREDIENTS

  • 1/4 cup cubed ciabatta or sourdough (or store-bought croutons)
  • 1 pound | 500 g large raw shrimp (prawns), peeled and deveined, tails intact
  • Juice of 1/2 a large lemon
  • 1 tablespoon minced garlic
  • Pinch of salt
  • Cracked pepper, to taste
  • ¼ cup nonfat diced bacon
  • 1 egg, soft-boiled (or poached)
  • 4 cups Romaine (Cos) lettuce, leaves washed and dried
  • 1/2 an avocado, sliced
  • 1/4 cup shaved parmesan cheese

Dressing:

  • 1/4 cup plain, nonfat greek yogurt
  • 1 tablespoon whole egg mayo (reduced fat)
  • 1/2 tablespoon olive oil
  • 1 garlic clove, crushed (or 1 teaspoon minced garlic)
  • 1 anchovy fillet, finely chopped or minced
  • 1 tablespoon lemon juice
  • 1 1/2 tablespoons freshly grated parmesan

INSTRUCTIONS

  1. Set the oven to the grill or broil setting and turn the heat up to high. On an oven sheet, arrange the cubed bread; drizzle with olive oil or spray with cooking oil spray, and bake until crisp on the middle shelf of the oven. Alternatively, use shop-bought croutons.
  2. In a small bowl, mix the shrimp, lemon juice, garlic, salt, and pepper. While preparing the other ingredients, let the meat marinate for around 10 minutes.
  3. A light sprinkle of olive oil is heated in a grill pan (or skillet or nonstick pan); the bacon is then fried until crisp and brown. Transfer to a hot plate and reserve.
  4. Leave about 1 teaspoon of the bacon fat in the pan for the shrimp after draining some of it. The shrimp should only be fried for two to three minutes on each side to avoid turning them rubbery. Place aside.

The Caesar Dressing is made by:

  1. In a magic bullet, tiny blender, or small food processor, combine the yogurt, mayo, oil, garlic, anchovies, lemon juice, and parmesan. Add salt and pepper to taste, then blend one more until the mixture is smooth. Try it out.

Build the salad:

  1. Combine the lettuce with avocado slices, croutons, shaved parmesan cheese, shrimp, and bacon. Pour over the dressing and blend thoroughly.
