In my home, the season is quickly approaching. If you’re not a fan of the Sticky Date/Toffee French Toast Casserole, Gingerbread French Toast Roll Ups are an improvement over the cannoli rolls from last year and are ideal for Christmas morning.

The Grinch would certainly be a lot happier character after cutting into these with flowing, melted Nutella and the strawberry juice released during cooking.

It still amazes me that the year is almost finished. Is it just me, or does time seem to pass more quickly as we age? We all needed something to calm our souls because there are so many changes taking place right now.

First, spread the Nutella over your bread, or use this recipe for Homemade Nutella Spread for a healthy choice. Easy. Add a few sliced strawberries on top. (Also, cranberries would be excellent in these.)

Your egg mixture should be whipped with brown sugar, ginger, cinnamon, allspice, and cloves.

Rolls are dipped in.

In less than 10 minutes, you can fry them up and have the ideal Christmas morning. Taste the enchantment of Nutella and gingerbread cookies (without the actual cookies) by sprinkling some sugar on top.

And you’ll be enjoying some French toast pleasure shortly. This is how my crib will appear on Christmas morning.

INGREDIENTS

  • 1 egg
  • 2 tablespoons skim/low-fat milk
  • 1 tablespoon brown sugar (or coconut sugar)
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon all spicallspicespoon ground cloves
  • 1/2 teaspoon vanilla extract
  • 8 slices of sandwich bread of choice, crusts removed (I use sourdough)
  • 4 tablespoons Nutella, divided (or any hazelnut chocolate/cacao spread)
  • ½ cup sliced strawberries (small pieces)
  • Icing sugar for dusting (OR 4 tablespoons of cinnamon sugar — optional
  • butter for greasing

INSTRUCTIONS

  1. In a medium-sized shallow basin big enough to hold the rolls, whisk together the eggs, milk, and vanilla.
  2. If the bread slices are excessively thick, carefully flatten each one by rolling it out. Avoid applying too much pressure or they may break.
  3. On each slice of bread, spread a half tablespoon of Nutella. Strawberries should fill up one-third of the bread slice. Gently and tightly roll the bread slice up starting from the Berry side (the Nutella will hold it together). Seam side down, and place aside. Continue until all the rolls are baked using the remaining bread.
  4. Add some butter or cooking oil spray to the pan and heat it on low to medium heat.
  5. Place the rolls seam-side down in the pan after dipping them into the egg mixture and rotating them to coat them evenly. Cook until golden brown, turning them every two to three minutes to ensure even browning.
  6. Remove them once they are thoroughly cooked and sprinkle them with confectioners’ or icing sugar (or roll them into a cinnamon sugar mixture)
