I’m thrilled to have collaborated with Flatout to bring you this wonderful riff on a classic family dish, avocado egg salad! A creamy avocado dressing is slathered over a salad with bacon, lettuce, tomato, avocado, and of course, egg.
I adore anything avocado-related or inspired by avocado (including Avocado Deviled Eggs). Bacon? Must have it to survive! Lettuce? Any sandwich needs to be crunchy. It, therefore, comes as no surprise that these three wonderful dishes have combined to complement creamy egg salad in this BLT Avocado Egg Salad.
A Fantastic Protein Source
There have been egg salads for ages. It is believed to have initially appeared in the middle of the 18th century. Eggs were a reliable staple in most homes since they were the least expensive protein.
Egg salad and egg salad sandwiches are still very popular because eggs are a practical, affordable protein choice.
Fast forward to this point, when creativity soars and a fresh interpretation of a classic is formed. All the essential components of a classic egg salad—egg, mayonnaise, garlic, and chives—have been combined, and I’ve just added some additional creamy, rich flavor with both mashed and cubed avocados.

Even while the recipe for this avocado egg salad is wonderful as written, you may always change it:
- Simply omit the bacon if you don’t have any. Alternatively, a piece of ham might go well with this sandwich in place of the bacon.
- Tomatoes, not your thing? Consider using chopped roasted red peppers. Such a treat!
- To add even more flavor, swap out the mayonnaise for your preferred ranch or blue cheese dressing.

- 6 hard-boiled eggs
- 1 avocado
- 2 teaspoons fresh lemon juice
- ¼ cup mayonnaise
- ¼ teaspoon garlic powder
- 1 tablespoon chives thinly sliced
- 2 tomatoes
- 12 slices of bacon cooked crisp
- \salt & pepper to taste
Instructions for Avocado Egg Salad
- Mix two teaspoons of lemon juice with one-half of the avocado.
- Add the egg yolks, mayonnaise, chives, salt, pepper, and garlic powder. Blend until uniform.
- Slice the egg whites. Slice the remaining avocado in half. Add avocado and egg whites to the egg yolk mixture.
- Add lettuce, tomato slices, 2 pieces of bacon, and the avocado egg salad mixture to the top of each flatbread.
