Chicken The reason I use breasts is that they are lean, cook well, and shred easily. If you only have thighs on hand, you can use those in this recipe. If using chicken thighs, skim any fat after cooking and then shred.

BBQ sauce There are no rules. If I have it on hand, I use homemade, but if not, store-bought works just as well! Use your favorite ingredients because the BBQ sauce contributes a lot of taste (If buying store-bought, I like this one).

Ingredients

  • 4 chicken breasts boneless and skinless
  • 18 ounces barbeque sauce
  • 12 strips bacon
  • 1 large onion thinly sliced
  • ½ cup water
  • ½ teaspoon salt
  • 18 rolls (such as Hawaiian Honey Wheat rolls)

  1. Over medium-high heat, cook bacon in a frying pan until crispy. Drain on paper towels.
    Sliced onions, salt, and 2 tablespoons of bacon oil are added to the frying pan. Cook onions until they are soft.
  2. Place in the 6 qt slow cooker’s bottom.
  3. Once the frying pan has cooled a little, carefully add the water and use a wooden spoon to remove the bacon and onion bits that have browned on the bottom of the pan. Put it in the slow cooker.
  4. BBQ sauce and chicken breasts should be added. Stir and cook for 7-8 hours on low or 4-5 hours on high.
  5. Use two forks to shred the chicken. Add the bacon, half at a time.
  6. Top slider buns with the mixture and the leftover bacon.

In this dish, thighs can be used instead of breasts. Before slicing chicken thighs, brush off any excess fat.
