BEANS Black beans are a preferred type of bean for this recipe. The beans can be replaced with any that you have on hand.

Try kidney beans, pinto beans, great northern beans, or even refried beans!

RICE It only takes a few minutes to prepare instant rice boiled with a small amount of salsa, which helps to fill you up while also adding taste.

Simply add a dollop of salsa to each burrito before rolling if you have leftover cilantro tomato rice or brown rice. Quinoa or couscous might also be ideal!

VEGETABLES If I have bell pepper, I use it, but frozen or canned corn works just as well if you’re low on vegetables.

CHEESE Without enough gooey cheese, no burrito would be complete. Although cheddar or any other cheese you have on hand will do, pepper jack is my first preference.

Other Improvements

  • Not a bean? No issue! Include your favorites and increase the number of vegetables. Bell peppers, maize, zucchini, and mushrooms are all excellent options.
  • Beef and bean burritos can be made by adding ground beef or turkey.
  • You can add jalapenos, avocado slices, diced tomatoes, or even your preferred taco toppings.
  • To transform them into breakfast burritos, add scrambled eggs.

Making Cheesy Bean Burritos: A Recipe

Dinner is ready in just a few easy steps!

  1. Rice should be cooked with salsa.
  2. Cook vegetables with black beans and seasonings for the filling (or taco seasoning). until thickened, simmer.
  3. ASSEMBLE Place filling, rice, and cheese on tortillas. Serve with sour cream and extra salsa after folding in the sides.

These can either be roasted in the oven with some cheese before serving or wrapped and served.

To Prepare Cheesy Bean Burritos at Home

These are far superior to pre-made frozen burritos and work wonderfully as grab-and-go lunches from the freezer. In the freezer, they ought to keep it for several months.

Frozen burrito preparation:

Ingredients

  • 1 tablespoon olive oil
  • ½ cup onion finely chopped
  • 1 green bell pepper diced
  • 1 clove garlic minced
  • 2 teaspoons chili powder
  • ½ teaspoon cumin
  • 16 ounces of black beans drained and rinsed
  • 1 cup instant rice
  • 1 cup water
  • ¼ cup salsa
  • 2 cups Monterey jack cheese shredded
  • 8 flour tortillas 8-inch

  1. Olive oil is used to cook bell pepper and onion until they are tender. Black beans, cumin, chili powder, and garlic are all stirred in. Cook for a further 2 minutes, or until fragrant and well heated.
  2. In a small saucepan, mix the salsa, water, and instant rice. up to a boil. Remove from heat and cover. Uninterrupted rest for five minutes.
  3. Cheese is divided among the tortillas. Over tortillas, distribute the bean mixture and rice mixture.
  4. Roll the burritos by folding the sides in. If preferred, serve with salsa and sour cream.

Notes

Put 2/3 cup white rice, 1 1/3 cups water, and 1/4 cup salsa in a saucepan to make this with long grain rice. 15 minutes or until liquid is absorbed under cover while simmering.

Burritos should be baked in a 9×13 pan. Add a further 1/2 cup of cheese on top, then bake for 15-20 minutes, or until the cheese is melted, at 350°F.

Prepare as indicated, wrap each burrito individually in plastic wrap or parchment paper, and store in a labeled zippered bag to make frozen burritos.

Reheat by defrosting in the refrigerator and then heating for one to two minutes in the microwave.
