I don’t know about you, but I’m thrilled that I can now enjoy the weather, let my kid play outside, and pick vegetables from my garden. Instead of spending the entire day in the kitchen slaving away, summer is a time to enjoy the outdoors and breathe in the fresh air.

Since it gets so hot here in the afternoon and early evening, I strive to keep meals simple and like to prepare as much as I can in advance. Pasta salads are the ideal solution!

Everyone enjoys a nice pasta salad recipe, and this one is even better because it can be made weeks in advance, requires no effort, and keeps for days in the refrigerator! The ideal dish to consume while drinking a NESTEA Iced Tea!

I adore a good garden salad just as much as I adore a wonderful pasta salad (particularly dill pickle pasta salad). Here, Cobb salad is a favorite since I adore almost every single ingredient in it.

What’s not to love about bacon, avocado, cheese, and hard-boiled eggs mixed in a creamy dressing?

In actuality, Cobb Pasta Salad has been a staple summer salad recipe for about 80 years and has been incredibly popular over that time.

When I decided to make a pasta salad last week, I thought the taste of a Cobb Salad would be fantastic in it. I was correct!

I typically buy a blue cheese or ranch salad dressing to make this extra fast, but if you have time (and your herb garden is overflowing), you can use my homemade buttermilk ranch dressing recipe.

The acronym EAT COBB, which stands for Eggs, Avocado, Tomatoes, Chicken, Onion, Bacon, and of course Blue Cheese, is a cute little tip to help you always remember what to add to your Cobb Salad.

(If you don’t like blue cheese, you can substitute feta, swiss, or sharp cheddar.)

Making a Pasta Salad

  1. To prepare your pasta al dente (firm), follow the instructions on the package. Salad with overcooked spaghetti will be mushy.
  2. your pasta water with salt. Don’t skip it; it’s important!
  3. Add more dressing if your pasta salad is being prepared in advance. If there isn’t enough dressing, the pasta will appear dry since it will absorb it up.
  4. The proportions for a standard pasta salad are:
    – 1 pound of pasta
    – 6 to 8 cups of additives (meats, veggies, etc)
    – For taste, use cheese and/or olives.
    – 1 cup of dressing or mayonnaise, with spice to taste
  5. Keep a small amount of each “add-in” to adorn the salad.

I could eat this salad almost every day thanks to the hearty penne pasta, plump juicy tomatoes that taste like the summer sun, and creamy avocado, bacon, and soft eggs. Ingredients

  • 1 pound penne or other medium pasta
  • 1 ½ cups grape tomatoes halved
  • 8 slices of bacon cooked & crumbled
  • 2 cups chicken diced
  • 4 hard boiled eggs peeled & chopped
  • 1 large avocado peeled & diced
  • 4 green onions sliced
  • ⅓ cup crumbled blue cheese
  • 1 cup ranch dressing or blue cheese dressing

  1. Follow the directions on the package to prepare pasta al dente. Submerge in cold water.
  2. In a big bowl, combine all the salad ingredients.
  3. Mix ingredients gently after adding the dressing.
  4. Serve right away or store in the fridge for up to 48 hours.
