This Cuban Mojo Chicken has been roasted to juicy perfection after being marinated in a potent Cuban Mojo marinade. For dinner tonight, try this zingy, garlicky Cuban chicken!

You’re in for a tremendous treat if you’ve never eaten marinated Cuban mojo chicken! It has depth and complexity and is made with orange juice, cilantro, garlic, lime, mint, cumin powder, salt, and pepper.

It is bursting with flavor. Garlicky and zesty, fresh cilantro’s exquisite flavors are out of this world.

What about the recipe’s secret ingredient? citrus juice. NO, after being cooked, it doesn’t taste orange!

Orange juice is a wonderful undiscovered marinade ingredient. Instead of only adding sugar, it also adds sweetness and other layers of flavor. Since I dislike eating fruit with meat, I can firmly assure you that it does not taste orange.

For shrimp, chicken, pork, and beef cooked in a variety of ways—on the stove, on the grill, in the oven, or under the broiler—the mojo marinade is excellent.

The only methods I do not suggest are the slow cooker and the Instant Pot because the majority of the cooking time for this kind of marinade benefits from some kind of caramelization.

While many slow cooker recipes allow for the last oven blast to brown the food, I find that this doesn’t work with Mojo.

Pork and chicken are two of my favorite proteins to cook with Mojo marinades. They do taste amazing when combined with the Mojo flavors, in my opinion.

I used bone-in chicken thighs and drumsticks for this specific recipe. I enjoy using these cuts since they require roasting for about 50 minutes, which is plenty of time for the meat to brown and allow the flavors to fully meld.

Although I’d sear the chicken on the stove instead of roasting it, it will work with chicken breast as well. You’ll get the gorgeous browning on the crust and a much better seal ofjuices sealre your freezer in advance to make your week a little easier. Chicken should be marinated before being placed directly in the freezer.

The chicken then marinates in the fridge overnight as it defrosts. Perfect!!!:-)

Ingredients for Cuban Mojo Chicken

  • 2-pound bone-in chicken thighs and chicken drumsticks about 8 pieces total

marinade:

  • ⅓ cup extra virgin olive oil
  • ½ cup cilantro leaves lightly packed
  • 1 teaspoon orange zest
  • ⅓ cup orange juice fresh
  • ¼ cup lime juice
  • ¾ teaspoon dried oregano
  • 1 teaspoon cumin powder
  • 1 ½ tablespoon fresh mint leaves
  • 4 garlic cloves
  • 1 teaspoon salt
  • ½ teaspoon black pepper

garnishes (optional):

  • 1 orange cut into wedges
  • cilantro leaves for garnish

  1. Put the ingredients for the marinade in a food processor. The cilantro should be finely chopped after blending.
  2. In a big bowl, cover the chicken with the marinade. Cling wrap the dish and let it marinate for 12 to 36 hours.

  3. Set the oven to 350°F.
  4. Scrape any remaining marinade from the bowl and add it to the chicken in the baking pan. Put the skin-side down on the thighs. If used, add orange wedges.
  5. For 30 minutes, bake the chicken. Turn and remove the chicken. Pour pan juices on top.
  6. 20 more minutes of baking are required to achieve a well-browned skin. After five minutes of rest, serve!

Notes

Use the marinade recipe to prepare chicken breast. Cook over medium-high heat on the stove instead of the oven.
