EGGS Although this recipe calls for whole eggs, egg whites are totally OK if that’s what you prefer! Typically, I calculate that two egg whites equal one egg. As long as the arithmetic works out, you can use mostly egg whites or a few whole eggs.

MILK These egg bites are extremely creamy because of the milk! If you don’t have milk, substitute cream or almond milk.

SEASONINGS The only flavors used in these egg bits are salt and pepper, and they are simply fantastic. Why not give these egg pieces some flavor by flavoring them with your favorite seasoned salt, cajun seasoning, or even taco seasoning?

ADD-INS The possibilities are endless with this recipe, which calls for cheese, diced ham, and green onions. Fun flavors can be created by adding up to 1 tablespoon of add-ins each cup.

  • VEGGIES It would taste excellent with fresh, freshly chopped herbs, roasted red peppers, mushrooms, caramelized onions, spinach, or even broccoli.
  • MEAT Add bacon bits, morning sausage, leftover sandwich meat, or even Italian sausage to these egg bites! How about any taco meat left over?
  • CHEESE The variety of cheeses would be delicious! Basically whatever cheese you have on hand, including Mozza, Monterey Jack, and Gruyere!
