SPAGHETTI SQUASH: Select a squash that is firm throughout. Depending on the size of the squash—which can range from 1 lb to 4 lbs—the baking time may need to be altered.

The recipe is seasoned with some basic ingredients like oregano and garlic, but feel free to substitute your preferred seasoning, such as Italian seasoning or Greek seasoning.

Ingredients

  • 1 spaghetti about 1 1/2 lbs
  • 1 tablespoon olive oil divided
  • ½ teaspoon oregano
  • 1 cup cherry or grape tomatoes halved
  • ¼ cup feta cheese crumbled
  • salt & fresh black pepper to taste
  • 1/4 teaspoon oregano
  • 1 tablespoon butter

  1. Heat the oven to 400 degrees. Use parchment paper to cover a baking sheet.
  2. Cut spaghetti in half lengthwise & scoop out the seeds. Discard (or save for roasting) (or save for roasting).
  3. Brush the cut side of the squash with olive oil and season with salt and pepper. Fill the cavity of each squash with half of the feta cheese and tomatoes. Season with additional salt & pepper and oregano.
  4. Place the squash on a baking pan uncovered and bake uncovered for 40-50 minutes or until the squash is tender when poked with a fork.
  5. Remove from the oven and use a spoon to place the feta cheese, tomatoes, and any juices in a small bowl.
  6. Stir together to create a creamy sauce.
  7. Use a fork to scrape the squash and create strands. Toss strands with butter. Add the feta and tomato mixture to the squash and mix.
  8. Serve warm with additional feta cheese and parsley for garnish if desired.
