PROTEIN With cheese and ground beef, this recipe is incredibly simple. Feel free to substitute your preferred cheese and ground chicken or turkey in place of the beef.

VEGETABLES Although this recipe calls for corn, leftover vegetables also work beautifully! Consider including diced frozen vegetables, chopped jalapenos, shredded zucchini, a can of diced tomatoes, or sliced black olives.

  2. Sauce: Taco spice and enchilada sauce are added when making sauce. In a casserole dish, put the beef.
  3. Mix: Mix the topping ingredients, then spoon them over the meat mixture.
  4. Bake after adding cheese on top.

Ingredients

  • 1 pound lean ground beef
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 bell pepper diced, green or red
  • 2 tablespoons taco seasoning
  • ¼ cup water
  • ¾ cup enchilada sauce
  • 2 cups cheddar cheese shredded, divided

  • 1 box corn muffin mix 8.5 oz
  • ½ cup sour cream
  • ½ cup corn kernels canned, fresh, or frozen
  • ⅓ cup milk
  • 1 egg
  • fresh cilantro chopped, for garnish

  1. Set the oven to 350°F.
  2. In a 10″ ovenproof skillet, mix the meat, onion, bell pepper, and garlic. until no longer pink, cook. Remove any fat.
  3. Add 1/4 cup water and taco seasoning. Simmer the water until it evaporates. Add enchilada sauce and stir. Add 1 1/2 cups of cheese on top.
  4. Combine corn, sour cream, milk, egg, and corn muffin mix. Spread the beef mixture with this.
  5. The remaining cheese is on top then bakes for 35 to 40 minutes.
  6. Serve with cilantro as a garnish.

Notes

Tamale Pie keeps well in the fridge for up to 5 days when stored in an airtight container.

Reheat using a single amount in the microwave. Reserving the seasonings, serve it once more.
