Ingredients for General Tso Chicken

  • 1 ½ pounds boneless chicken breasts
  • salt & pepper to taste
  • 2 eggs beaten
  • ½ cup cornstarch + 2 tablespoons, divided
  • 3 tablespoons vegetable oil or as needed, divided
  • 2 green onions thinly sliced, white and green divided
  • 2 cloves garlic minced
  • 1 teaspoon minced ginger

sauce

  • ½ cup low sodium chicken broth
  • ¼ cup soy sauce low sodium
  • 2 tablespoons hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 2 dried red chili peppers whole, or 1/2 teaspoon red chili flakes
  • ½ teaspoon sesame oil

  1. 1″ chunk of the chicken breast should be cut. Sprinkle with salt and pepper and stir in the egg. Take the chicken out of the egg and combine it with 1/2 cup cornstarch.
  2. In a pan, heat 2 tablespoons of oil to medium-high heat. Cook the chicken for about 5 to 6 minutes, or until it is crisp and cooked through. Repeat with the remaining chicken, if necessary using extra oil. Take out of the pan and place aside.
  3. Whisk all the ingredients for the sauce together in a small bowl.
  4. In a little pan over medium heat, warm 1 tablespoon of oil. Green onion whites, ginger, and garlic are added, and they are cooked for about a minute until aromatic. Add the sauce ingredients and cook for two to three minutes, or until it thickens.
  5. 2 tablespoons of water and the 2 remaining cornstarch should be combined. While whisking, slowly sprinkle cornstarch into the sauce to gradually thicken it. Combine sauce with the cooked chicken and top with the last green onion slice.

Notes

For up to four days, leftovers can be stored in the refrigerator in an airtight container.
