Components & Alterations

This sauce is not only flavorful and rich but it can also be modified by adding any leftover vegetables from the fridge or pantry.

  • Since they form the foundation of the sauce, I like to indulge and use high-quality canned tomatoes, however any canned tomatoes would work nicely in this recipe. San Marzano tomatoes have a strong, vivid flavor, so I think they’re worth the additional money or two.
  • Don’t be scared to substitute ground turkey or even Italian sausage for the beef in the recipe.
  • No peppers, bell? Use spinach, zucchini, carrots, or mushrooms that have been cut or shredded!
  • If you have any fresh herbs on hand, they make a nice accent. Fresh herbs should be added after the sauce has been boiled, right before serving, or you can stir in a cube of pesto to preserve their essence.
  • Additionally, you may top pappardelle pasta with meat sauce and layer it over lasagna, eggplant parmesan, or even sloppy joes!
