Our go-to fast bread recipe has changed. In the past week, we’ve baked this orange coconut bread twice, and we simply cannot get enough. It has served as our lunchtime snack, dinner, and even dessert. To make it exceptionally moist, a full cup of yogurt is added.

Making this fast orange coconut bread is easy. In actuality, it just takes around 10 minutes to combine the batter and place it in the oven.

Making muffins is akin to the method. In a bowl, combine the dry ingredients first, and then the wet components. They should be combined, then poured into a loaf pan and baked.

(By the way, the bread is wonderfully moist since we add yogurt to the batter.

There are two things you can do after the bread has been baked and cooled. You can glaze it or leave it as is.

We adore it in both forms. You’ll be relieved to learn that the glaze only needs two ingredients, powdered sugar, and orange juice if you decide to use it.

If you choose not to glaze, we advise toasting and buttering the bread slices. The coconut toasts along with the bread. It’s quite good.

Fresh orange zest and shredded coconut are abundant in this simple fast bread. Yogurt is responsible for its exceptional moisture. The glazing is optional; both glazed and unglazed versions are delectable. Serve warm or toast with butter while at room temperature.

YOU WILL NEED

  • 1 1/2 cups (195 grams) of all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1 cup (280 grams) vanilla yogurt, we used Yoplait Greek yogurt
  • 1 cup (200 grams) sugar
  • 3 large eggs
  • 1 1/2 cups (140 grams) sweetened flaked coconut
  •  Also, 1 tablespoon grated orange zest
  • 1 teaspoon vanilla extract
  • 1/3 cup (80 ml) vegetable oil
  • OPTIONAL GLAZE
  • 1/2 cup (60 grams) powdered sugar
  • 1 tablespoon orange juice
  • 1 tablespoon sweetened flaked coconut

  1. Set the middle oven rack position and preheat the oven to 350 degrees F. Use butter or nonstick cooking spray on a 9 by 5-inch loaf pan.
  2. In a big basin, combine salt, cinnamon, baking powder, and flour. In a separate bowl, combine the yogurt, sugar, eggs, coconut, orange zest, and vanilla.
  3. The mixture of yogurt and wheat should be added. Stir just until combined. Mix with the vegetable oil after adding the batter.
  4. When the loaf tester inserted into the center of the loaf comes out clean, pour the mixture into the prepared loaf pan and bake for 50 to 55 minutes. The loaf should cool entirely on a cooling rack after 15 minutes in the pan.

GLAZE BREAD

  1. After cooling and baking the loaf. Orange juice and powdered sugar are combined until smooth; sprinkle over the loaf. On top, sprinkle coconut. When the glaze has had time to set, about 10 minutes, serve.

TIPS

  • Any vanilla yogurt will do for this; we used Yoplait Greek vanilla yogurt.
  • A loaf pan measuring 8 1/2 by 4 1/2 inches has also worked well for us (in fact, since it is a little smaller, the batter domes nicely).
