I enjoy all kinds of filled mushrooms. Cream cheese, cheese, bacon, crab, loaded cheeseburgers, or even a straightforward salsa… No matter what you put in them, I always start with the appetizer! The top of my list is undoubtedly these pizza-stuffed mushrooms.

Simply put, mushrooms have such a delicious, earthy flavor, and filling them is simple. My favorite method for preparing mushrooms is to wash them, remove the stem, and then use a tomato or strawberry huller to enlarge the hole for additional filling.

Although this recipe asks for frying the stems with a little garlic for added taste, I don’t always use the stems. Everyone agrees that this pizza stuffed mushrooms are naturally low in carbs and entirely high in flavor.

Ingredients for Pizza Stuffed Mushrooms

  • 24 mushrooms
  • 1 clove garlic
  • 2 teaspoons olive oil
  • 1 can of pizza sauce
  • mozzarella cheese
  • mini pepperoni or your favorite toppings
  • basil for serving

  1. Turn on the 375°F oven.
  2. Remove stems from mushrooms and clean them. To make a place for filling, scoop out the interior of the mushrooms using a tiny spoon.
  3. Chop the mushroom stems finely. Over medium heat, add a skillet with olive oil, garlic, and a sliced mushroom stem. Cook for 5 minutes, then slightly cool.
  4. Place mushroom stems inside the caps. Add 3 small pepperonis, 1 tablespoon cheese, and 1 tablespoon pizza sauce to each.
  5. Bake for 18 to 20 minutes, or until cheese is browned and bubbling and mushrooms are cooked.
  6. Before serving, allow it to cool somewhat.
