One of the best creamy homemade casseroles (without using canned “cream of” soups) is poppy seed chicken. I’m unable to stop!

Poppy seeds are added to a simple homemade cream sauce with chicken that has been shredded. Serve poppy seed chicken with potatoes or rice!

From scratch, simple

Chicken casseroles are fairly typical, but poppy seed chicken stands out and is one of our favorites because of the thick, creamy sauce! It is freshly cooked and incredibly flavorful.

You can prepare this dish up to 48 hours ahead of time (keep the topping separately), then bake it right before serving.

The finishing touch is the crispy, crunchy coating!

  • 1 onion diced
  • 1 clove garlic minced
  • ¼ teaspoon poultry seasoning
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 cup chicken broth
  • ¾ cup light cream
  • 4 ounces cream cheese
  • ⅓ cup sour cream

topping

  • ½ cup crushed cornflakes or buttery round crackers
  • 3 tablespoons melted butter

  1. Turn on the 375°F oven.
  2. Onion, garlic, and poultry seasoning should be cooked in butter over medium heat until soft. Cook the flour for
