So what characterizes a chowder?

In most cases (but not always), chowders have a creamy foundation with a chunky texture. Clam chowder, corn chowder, and of course this seafood soup are a few chowder variations.

I begin by boiling the vegetables in chicken or seafood broth to give them fantastic flavor, and then add the fish and cream to finish cooking.

In some cases, a roux can be used to thicken chowders, and in the case of this seafood chowder recipe, the potatoes also contribute a significant amount of starch to the thickening process!

With its abundance of fish, shrimp, and scallops, seafood chowder is an excellent standalone dinner. We serve Easy Homemade Buttermilk Biscuits or Cheddar Bay Biscuits on the side to mop up any remaining creamy delight!

I always add corn to my seafood chowder recipe to give it color and a tinge of sweetness. This recipe is ideal if you have excess vegetables that you need to use up! The addition of peas, peppers, or mushrooms to this chowder is fantastic!

  3. Add the fish and cream, then cook for a few minutes.
  4. Dispense and savor!

In this chowder recipe, you can include any kind of seafood, including salmon, lobster, crab, etc. Just watch the cooking time to prevent overcooking your fish!

Ingredients

  • ¼ cup butter
  • 1 medium onion diced
  • 1 teaspoon old bay seasoning
  • ¼ teaspoon thyme
  • ¼ cup flour
  • 1 stalk celery sliced
  • 1 carrot sliced
  • 1 pound of potatoes peeled and cubed
  • ½ cup corn
  • 5 cups broth seafood or chicken
  • ½ cup white wine
  • 8 ounces white fish cut into chunks (cod/salmon/tilapia/haddock)
  • 8 ounces scallops
  • 12 ounces shrimp peeled and deveined
  • 6 ½ ounce chopped clams canned, drained
  • 2 cups heavy cream
  • 1 tablespoon parsley

  1. In butter, cook onion until it is soft. Cook for 2-3 minutes after adding flour, Old Bay seasoning, and thyme.
  2. Add the broth, wine, potato, corn, carrot, and celery, and then bring to a boil. Ten minutes of simmering at reduced heat.
  3. Add cream and fish and stir. Cook for 8 to 10 minutes, or until the potatoes are soft and the fish is completely cooked and flaky.
  4. Add the parsley and season to taste with salt and pepper.
