Shrimp Fajitas

  • 2 tablespoons paprika
  • 1 teaspoon chipotle powder
  • 1 ½ tablespoon cumin powder
  • ½ teaspoon salt or to taste
  • 1 tablespoon dried oregano
  • 1 tablespoon onion powder
  • 2 tablespoons vegetable oil
  • 1 onion sliced
  • 3 cups bell peppers sliced, I used red and yellow bell peppers
  • 1 pound large shrimp deveined and peeled
  • cilantro lime, sour cream, and guacamole for topping
  • tortillas for serving



  1. To prepare fajita seasoning, combine salt, paprika, chipotle powder, cumin powder, oregano, and onion powder in a basin.
  2. The shrimp should be thoroughly covered after receiving the first half of the spice. Place aside.
  3. The onions and bell peppers are added to a big cast iron skillet that is heated up with a tablespoon of oil. Cook the vegetables for 4-5 minutes, or until they start to soften. Mix well after adding the last of the spices.
  4. Vegetables in the skillet can be slid to one side.
  5. The shrimp is then added to the skillet with the remaining oil. The shrimp should be pink and fully cooked after 3–4 minutes of cooking.
  6. Serve with your favorite toppings in tortillas.
