Our meal rotation frequently includes chicken souvlaki. We adore how quick and simple it is to prepare and how delicious it is.

A straightforward marinade of garlic and lemon is applied to chicken breasts. Place them on skewers, then cook them until they are juicy and tender. (Chicken Souvlaki)

Although souvlaki can be served with rice or potatoes, my personal preference is to wrap it in a pita with plenty of fresh lettuce, tomatoes, onions, and tzatziki. Very excellent!

Souvlaki is grilled meat that has been skewered and can be made with a variety of meats, including beef, lamb, hog, and chicken (as in this dish).

Simple herb, lemon, and garlic with a little oil make up the marinade.

Souvlaki vs. Gyros: The meat in souvlaki is cut into pieces, but the meat in chicken gyros is typically finely sliced or shaved. While shawarma and gyros are similar, they are prepared and spiced differently.

Souvlaki marinade for chicken

A marinade is used in a Greek chicken souvlaki recipe to add taste. All you need are a few basic pantry items: lemon juice, oregano, garlic, extra virgin olive oil, and lemon juice!

The chicken will become softer as the herbs, spices, and garlic are left to marinate for a longer period of time. The make-ahead magic is what makes souvlaki such a simple dish!

Since chicken souvlaki can be prepared and stored in the refrigerator for up to 24 hours ahead, it is ideal for advance planning.

Making Chicken Souvlaki

It really is as simple as 1, 2, or 3 to make souvlaki! Simple skewer, marinade, and grill!

  1. Marinate: While the skewers are soaking, whisk together all the ingredients for the marinade and chill for at least four hours.
  2. Using skewers that have been soaked, thread chicken, and, if preferred, onions.
  3. Grill: Cook chicken skewers over medium-high heat on an oiled grill grate, flipping them often to ensure the chicken is thoroughly cooked.

Although I prefer to grill this (in the colder months, I use my indoor grill pan), souvlaki can be prepared in the oven.

Prepare the skewers with the bite-sized pieces as instructed before making the souvlaki in the oven. Set skewers on a pan covered with foil and preheat the broiler to high.

Chicken should be broiled at a distance of 4 to 6 inches from the heat for 5 to 6 minutes on each side, or until it reaches 165°F.

Wooden skewers can avoid burning when used on the grill or burner by soaking them in water. Always keep this method in mind while using skewers to roast meats or veggies.

Serving suggestions

  • Greek salad with marinated cucumbers and tomatoes on the side.
  • Greek-style rice Mediterranean pasta salad and roasted potatoes with lemon
  • Greek yogurt on the side, extra tzatziki sauce, or baba ganoush
