Ingredients for Lemon Chicken Soup

  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter divided
  • 2 chicken breasts boneless skinless, trimmed of fat
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • 1 medium yellow onion diced
  • 2 medium carrots peeled and diced
  • 1 large celery stalk diced
  • 4 cloves garlic minced
  • ½ teaspoon dried thyme
  • 1 ½ cups water
  • 1 cup orzo pasta dried uncooked
  • 4 cups chicken broth reduced sodium
  • 1 bay leaf
  • 1 sprig of fresh rosemary
  • juice of 1 lemon
  • 1 sprig of fresh oregano
  • 2 teaspoons fresh parsley minced

  1. A sizable stockpot or dutch oven should be heated over medium heat with the addition of 1 tablespoon of butter and olive oil. Chicken breasts should be salt and pepper-seasoned on both sides. Cook the chicken in the dutch oven for 3–4 minutes on each side, or until it is cooked through and golden. On a platter, set aside the chicken.
  2. Onion, carrots, celery, and garlic are then added to the Dutch oven with the remaining butter. Cook for about 3 minutes while often stirring until tender. Add dried thyme and mix.
  3. With a wooden spoon, scrape out any browned bits from the bottom of the Dutch oven before adding the chicken broth and water. up to a boil.
  4. Use two forks to shred the chicken while the soup is coming to a boil. When the soup begins to boil, toss in the orzo, the bay leaf, the rosemary, and the oregano. Once the orzo is cooked, reduce the heat and simmer for 10 to 12 minutes.
  5. Take out and throw away the bay leaf and the rosemary/oregano sprigs. Add lemon juice and chopped fresh parsley. If required, taste and adjust the seasonings.
