This recipe fulfills its promise of simplicity. You’re going to sear some pork chops in a butter/oil mixture to give them the best flavor and a golden, juicy outcome.

This not only gives crispy, delicious edges but also BIG flavors. Following the completion of the chops, you will sauté the mushrooms with garlic and herbs for an even BIGGER flavor.

Remember to scrape up any browned bits from the chops’ pan for EVEN MORE flavor.

Wine

The option is yours to add dry white wine to the pan to deglaze it. Use a high-quality brand of Pinot Grigio if you’re drinking wine (my favorite).

If you’d rather not include wine? No issue! Simply stir in the cream, let it thicken, and then stir the chops back in to let them soak up all the flavors.

INGREDIENTS

  • 4 bone-in or boneless pork chops (about 1-inch thick)
  • 1 teaspoon salt for seasoning (adjust to your taste)
  • 1/3 teaspoon of black pepper, cracked
  • Olive oil, two tablespoons
  • Unsalted butter, two teaspoons

Mushroom Cream Sauce

  • Sliced brown mushrooms, 1 cup
  • fresh chopped parsley, divided into two tablespoons.
  • 1 teaspoon finely chopped fresh thyme
  • smashed four garlic cloves
  • 1/2 cup half-and-half or reduced-fat cream (heavy cream or evaporated milk)

INSTRUCTIONS

  • Season chops with seasoning salt and pepper. Heat oil and butter in a frying pan or skillet over medium-high until butter is melted.
  • When the pan is hot, sear chops for about 3-4 minutes per side until golden browned and the center is no longer bright pink (fry in batches if you need to). Transfer to a warm plate. Set aside.
  • Add the mushrooms to the buttery juices in the pan and cook for 3-4 minutes over medium heat. Scrape up any bits left over from the chops. When mushrooms are browned, add half parsley, half thyme, and all of the crushed garlic; sauté for 30 seconds until fragrant.
  • Pour in the cream and bring to a gentle simmer for 3-4 minutes until slightly thickened. Season with salt and pepper, to your taste.
  • Add the chops back into the sauce, and allow to simmer for a minute to heat through. Garnish with remaining herbs and serve immediately.

NOTES

Optional wine addition for the creamy sauce: Add 1/2 cup dry white wine after sautéing the garlic in Step 3. Simmer the liquid until it has been cut in half (about 3 minutes). then proceed to Step 4.
