Ingredients

  •  cup butter
  • 1 small onion diced
  •  cup flour
  • ½ teaspoon thyme
  • 3 cups milk
  • ½ cup chicken broth
  • 3 pounds of white potatoes sliced about ⅛” thick
  • salt and pepper to taste
  • 2 cups cooked ham diced
  • 1 cup sharp cheddar cheese optional

Instructions

  1. Set the oven to 350°F. A 9×13″ pan should be greased and saved.
  2. Onion and butter should be cooked over low heat until the onion is soft. Cook for 1-2 minutes after adding the flour and thyme.
  3. Reduce heat to low and gradually add milk, stirring after each addition. As you add more ingredients and stir them in, the mixture will begin to thicken yet smooth out. Stir in the chicken broth, season with salt and pepper, and then simmer for one minute.
  4. Put 1/3 of the potatoes on a plate, followed by 1/3 of the ham and 1/3 of the sauce. Layers should be repeated, ending with sauce.
  5. 50 minutes of covered baking When the potatoes are cooked, remove the cover and bake for another 25 to 35 minutes. If using, add the cheese in the final 15 minutes.
  6. At least 15 minutes should pass before serving. Add parsley as a garnish.
