Ingredients for Cheesy Potatoes
The obvious ingredient in this recipe is potatoes, but we also include a lot of cheddar cheese, sour cream, butter, soup, and green onions.
To fit your preferences or to use what you have on hand, you can change these ingredients.
Cheese:
I’ve found that cheddar cheese, especially extra-sharp cheddar, provides the greatest sauce with the most flavor, but a nice swiss or your favorite cheese will work just fine!
Almost any variety of potatoes can be used in this dish.
Potatoes:
In a rush? Instead of boiling your own potatoes, use potatoes that have been browned in the country-style hash.
Skip the peeling and choose potatoes with thin skin, such as Yukon gold or red potatoes.
Canned soup:
Any type of condensed “cream of” canned soup may be used in this recipe. To reduce the salt, I adore using homemade condensed mushroom soup.
Add a cup or two of diced ham or some poached chicken breasts to your cheesy potato bake to make it more of a one-pot dinner (or leftover roast chicken). This casserole would be fantastic with even ground beef!
Making Cheesy Potatoes (with real potatoes)
This casserole is a straightforward adaptation of scalloped potatoes that uses diced potatoes instead of whole potatoes and requires less preparation due to an easy-to-make sauce. How simple it is to prepare potatoes in the oven is as follows:
- The diced potatoes should be cooked until soft.
- Combine the rest of the ingredients after melting the butter. Keep some cheese for toppings.
- Included in the mixture of ingredients are the cooked potatoes. Transfer the mixture to a casserole dish that has been buttered.
- Add the remaining cheese on top, then bake until bubbling and golden.
When baking these cheesy potatoes, don’t cover them. The top should turn a golden brown color.
Not quite prepared for baking? Before baking, cheesy potatoes can be stored in the refrigerator for two to three days.
Therefore, make this recipe even easier by finishing all the preparations the day before! To prepare them, simply follow the recipe’s instructions and place them in the oven.

Is Cheesy Potato Casserole Freezable?
When baked, cheesy potatoes are tasty and soft. This casserole can be prepared, baked, and frozen in advance. Or, if there are any leftovers, freeze them!
Before baking this dish at 400°F for about an hour, or until it is boiling hot and the cheese is well browned, allow it to defrost.

Ingredients
- 3 pounds diced potatoes or 30 ounces country-style hash browns
- ¼ cup butter melted
- 1 cup sour cream
- 1 cup cream of chicken soup or cream of cheddar
- ¼ cup green onion chopped
- 2 cups cheddar cheese divided
Instructions
- Grease a 9×13-inch baking dish and preheat the oven to 375 degrees.
- Place fresh potatoes in a saucepan with cold water if used. 12 to 14 minutes of simmering or until fork tender Drain and give a little time to cool.
- Melt butter, then stir in soup, onion, sour cream, and 1 1/2 cups of cheese.
- Combine after adding the potatoes (or frozen hash brown potatoes). Pour onto a baking dish that has been prepared.
- Add the remaining cheese on top, then bake for 28 to 30 minutes, or until bubbling and golden.
NOTES
Optional topping: Combine 1 1/2 cups of lightly crushed cornflakes with 4 tablespoons of melted butter to make a crispy topping. Bake casserole with a topping.
