VARIATIONS Add a few toasted walnuts, hazelnuts, or almond slices! Maraschino cherries can be added on top, or before baking, stir some peanut butter into the batter.
Making a Pudding Cake
This cake is incredibly quick and simple to make, and it always looks great!
- In a casserole dish, mix the first four ingredients. Blend everything completely using a whisk.
- Components that are liquids (per the recipe below). Stir thoroughly to combine.
- Add the topping in a scattering, DO NOT STIR. Over the top, pour boiling water and bake.
- Serve warm with sprinkles or chopped nuts with vanilla ice cream or whipped cream!

- Once the topping has been sprinkled on top, do not mix or stir it.
- The water should be quite hot when it is poured on top of the dessert. I use warm running water (or hot water from my coffee machine).
- After baking, let the dessert cool for at least 10 to 15 minutes to give the pudding layer some time to firm up.
- The pudding cake should be kept at room temperature in a sealed container.

Ingredients
- ¾ cup all-purpose flour
- ½ cup sugar
- ½ cup unsweetened cocoa powder
- 1 ½ teaspoons baking powder
- ⅔ cup milk
- 2 tablespoons vegetable oil
- 1 teaspoon vanilla

- ⅔ cup brown sugar packed
- ¼ cup cocoa powder
- ¼ cup miniature semisweet chocolate chips
- 1 ¼ cup very hot water
Instructions
- Set the oven to 350°F.
- Combine flour, white sugar, cocoa powder, and baking powder in a 2-quart casserole dish.
- Add vanilla, milk, and oil. Stir thoroughly to combine.
- Combine brown sugar, cocoa powder, and chocolate chips in a small bowl. over the cake batter, sprinkle. NEVER STIR. Over the top, pour hot water.
- 30 to 35 minutes of baking time, or until the top appears cooked. Serve hot (with ice cream if desired).
