You’ll make these simple egg noodles again and over again because they are so good! In addition to being delicious, these noodles have a soft, almost dumpling-like feel that makes them the ideal side dish for your favorite fall dishes.
For the ideal side, simply add some butter, salt, and pepper. You can also top them with beef stew or ground beef stroganoff (hamburger). Additionally, Egg Noodles taste fantastic added to homemade chicken noodle soup or topped with parmesan Parmesan.
Made-at-Home Egg Noodles
I was given the wonderful opportunity to have an old recipe box, which I adore so much. As I read through each handwritten card, I attempt to picture the tales and the love that went into making it. Some of the recipes are odd (lime jello with tuna is NOT a thing), but others, like this one, are just fantastic!
Describe the egg noodles.
Egg noodles are just plain noodles that are produced from eggs and flour. Strips of the thinly rolled dough are cut into pieces and fried in hot water. Egg noodles are ideal for goulash, stroganoff, or soups since they cook quickly and easily.
Creating Egg Noodles
Making homemade egg noodles is pretty simple. The ingredients for these homemade egg noodles are flour, eggs, milk, and a little butter. While giving the dough a rich flavor, the butter also makes it silky smooth.
- Add butter, milk, and salt to the flour mixture after that.
- Once sticky, combine with a fork or pastry cutter.
- The sticky dough should be turned out onto a floured surface and kneaded until smooth, adding flour as necessary.
- Give the dough time to rest (I learned this while making pasta in Italy).
- Cut the dough into strips after rolling it out to a thickness of 1/4 or 1/8 inch.
The noodles can sit for a bit, but you shouldn’t let them dry out because that would prevent them from cooking properly (speaking from experience). They can be covered for up to two hours if necessary.
Cooking Egg Noodles
To make this recipe, start with freshly made, silky noodles. Remember that they only need a short time to cook, so prepare the remainder of your meal beforehand. Roll them somewhat thinner than you anticipate using them because they will swell and thicken once cooked.
- It’s crucial to cook noodles in a big pot of salted, boiled water. To cook correctly, the noodles need room, and salt gives them flavor.
- You only need to cook the noodles for 3–4 minutes if they are fresh. (Remember that dried egg noodles from the grocery store need to simmer for around 6–8 minutes.)
- After cooking, quickly drain and serve.
Noodles in Egg
Store-bought noodles differ significantly from those cooked at home. They have a distinct feel and are thicker, more like dumplings.
The eggs are the primary distinction between noodles and normal pasta. While normal pasta (which I learned to make in Italy) can include a combination of semolina and wheat flour, water, and a lesser ratio of egg, noodles are produced with a higher proportion of eggs to flour. In most cases, dried pasta purchased in stores doesn’t have any eggs at all.
While these Easy Egg Noodles are great on their own, I prefer to serve them with butter, salt, pepper, and maybe a sprinkling of parmesan cheese. Although the ingredients are different from my Old Fashioned Chicken and Dumplings, the texture of homemade egg noodles is thicker and almost dumpling-like, making them the ideal basis to top any saucy recipe!

Ingredients
- 2 cups flour
- ⅛ teaspoon salt or to taste
- 2 eggs
- ⅓ cup milk
- 1 tablespoon butter softened
- ¼ cup flour for dusting
Instructions
- Combine the salt and flour in a big basin. Place aside.
- Eggs are beaten together in a small basin. To the flour mixture, add the eggs, milk, and butter. First, stir with a fork, then thoroughly combine with your hands.
- If the dough is sticky, knead it on a surface dusted with flour, adding a small amount of flour at a time. Keep kneading for another five minutes, or until smooth. After wrapping in plastic wrap, take a 20-minute break.
- Roll out the dough to a thickness of 1/4 or 1/8 inch on a lightly dusted board. Dust with flour after cutting into strips.
- Noodles should be cooked for around 3 minutes in a big pot of salted boiling water. Add butter or your preferred pasta sauce before serving.
