  • 2 tablespoons olive oil
  • 1 onion chopped
  • 2 pounds cubed chuck or stew meat
  • 10 ½ ounces beef broth

  • 1 tablespoon Worcestershire sauce
  • 1 bay leaf
  • salt & pepper to taste

To thicken gravy:

  • 3 tablespoons cornstarch
  • 1/3 cup water

Instructions

  1. One tablespoon of olive oil should be heated over medium-high heat in a big saucepan or Dutch oven. Add salt and pepper to the steak, then brown it in small batches. The beef should be taken out and kept aside.
  2. Reduce the heat to medium-low and add the onion and remaining oil. Cook for 10 minutes or until softened.
  3. In the pot, combine the beef, soup, stock, Worcestershire sauce, and bay leaf. Bring to a boil, then reduce heat, cover, and simmer for 1 1/2 to 2 hours, or until the meat is tender to the fork.
  4. Combine cornstarch and 1/3 cup of cold water to thicken the gravy. Bit by little, while stirring, pour into the beef until the required consistency is reached.
