Giardiniera is a delicious snack, and side dish, and is especially delicious on top of our favorite sandwich dishes.
Depending on how many serrano peppers and red chili flakes are used, this recipe can be made fiery or mild.
Giardiniera can be served as a side dish alongside fresh bread, cheese, olives, and wine on an antipasto platter. You could also create a muffaletta or put giardiniera on your favorite Italian meat sandwiches!
Describe Giardiniera
Giardiniera is essentially pickled veggies and is pronounced jar-din-era. This mixture of seasonings, spices, and fresh vegetables is marinated in vinegar and olive oil to create a brine. In this recipe, it is not canned; rather, it is prepared more like a fast pickle.
Giardiniera made from scratch is a delicious topping for hotdogs, hamburgers, and even sandwiches.

VEGGIES
Giardiniera is frequently prepared using a variety of fresh vegetables. Serrano peppers, olives, cauliflower, and carrots are a must-have! Onion, celery, and bell peppers are added.
MARINADE
It is kept in a mixture of oil and vinegar. White wine vinegar and mild-tasting olive oil go well together, in my opinion. In this recipe, canola oil and several kinds of vinegar, including white vinegar, work.
As you store the oil for this recipe in the refrigerator, it will solidify. Before serving, take the jar out of the refrigerator and give it a good shake at room temperature for about 20 minutes.
Making a Giardiniera
This tasty giardiniera dish may be made by anyone who knows how to chop vegetables!
- Vegetables should be cut into small pieces and chilled in salt water for an entire night.
- Place the well-drained vegetables in a glass container. Seasonings should be added before adding vinegar and olive oil.
- Giardiniera should continue to marinate for at least 3 days in a mason-style jar in the refrigerator while being well covered.
Giardiniera Serving Instructions
- On a buffet table, place giardiniera next to grilled meats or cured meats.
- We enjoy it best when paired with a cheese or charcuterie buffet.
- It tastes wonderful on top of an Italian sub!
- Serve it with pulled pork or shredded beef as a side dish or as a condiment.
Guides to Success
- The technique of soaking the ingredients in salt water overnight was adopted from Jeff Mauro and makes giardiniera much superior (although we do prefer to add vinegar to our oil mixture).
- Giardiniera can be stored in the refrigerator for up to one month because it is essentially pickled veggies.
- Before serving, marinate for at least 3 days, preferably more!

Ingredients
- 3 cups water
- 3 tablespoons kosher salt
- 1 ½ cups cauliflower broken into small pieces
- 1 stalk celery sliced
- 2 serrano peppers or to taste
- 1 carrot sliced
- 1 red bell pepper sliced
- ½ onion sliced
- 2 cloves garlic minced
- ½ cup green olives with pimentos, sliced
- ½ cup white wine vinegar or white vinegar
- ¼ teaspoon chili flakes
- ½ cup light olive oil or vegetable oil
- ½ teaspoon oregano
Instructions
- In a medium basin, combine kosher salt and water. Include the following: green olives, onion, bell peppers, celery, cauliflower, serrano peppers, and celery. Mix everything together, then chill for the night.
- Vegetables should be drained and well rinsed. Put in a large jar.
- Oregano, chili flakes, vinegar, and olive oil are all combined in a whisk. Pour over the vegetables, cover, and store in the fridge for at least three days before using.
- Maintain for a month.

- Any light-tasting oil can be substituted for the oil. White vinegar can be used in place of vinegar.
