- Preheat the oven to 400 degrees.
- Place 8 pieces of bacon on a wire rack on top of a cookie sheet and cut into thirds.
- Cook the bacon for 20-30 minutes in the oven. Thin bacon takes about 24 minutes to cook, whereas thicker bacon takes closer to 30-34 minutes. (To see if the chips are done, remove the bacon from the oven and let it cool for a minute or two.) Carefully push a chip, and if it yields a lot, return the baking sheet to the oven for 3-5 minutes before testing again. It’ll cool nice and crispy if the bacon gives a little.)

- You want to bake the bacon long enough for the slices to get crispy but not burnt. When the bacon is done, it will be a solid orangey-reddish color, but not yet blackened around the edges!
- In this case, thin bacon is preferred. It takes on a light flavor and resembles a potato chip rather than thick bacon. It also has a higher fat content than meaty bacon, making it more of a fat bomb!
- After baking until crisp, sprinkle with a little bit of fresh lime juice to give these keto chips a tortilla chip twist. Alternatively, before baking, season with taco seasoning.
