Apples That Make the Best Pie Filling
You’ll need apples that stand up well, much like when making apple pie, to avoid making applesauce. Because they have a tangy flavor that prevents the filling from becoming excessively sweet, we believe granny smith apples make the ideal pie filling.
Try the Braeburn, golden delicious, or Honeycrisp varieties.
This recipe also calls for sugar, water, spices, and cornstarch (this makes the sauce portion).
How to Make Apple Pie Filling at Home
As simple as apple pie is how people often describe this dish.
Apples are simply added to a skillet with some water, sugar, and cinnamon after being peeled, sliced, and chopped.
When the ingredients are tender, I add a little cornstarch to the apple pie to thicken it. The “saucy” portion is made from any apple juice that has leaked out.

- To give something a caramel flavor, switch out white sugar with brown sugar.
- 1 teaspoon of lemon juice is added.
- I use ground cinnamon, but you may also use pumpkin pie spice, apple pie spice, nutmeg, or your warm spice blend.
Apple Pie Filling Freezing Instructions
It is possible to use this delightful apple pie straight away. If I’m preparing an actual apple pie from scratch, I don’t pre-cook the filling because we primarily prepare it to substitute cans of pie filling in recipes. Of course, if you do prepare this filling, you can freeze it.
Just prepare as stated, then cool. In a freezer bag, freeze. When ready to use, let the food defrost overnight in the refrigerator before using it.

Ingredients
- 4 medium apples
- ⅓ cup sugar
- 3 tablespoons water
- 2 tablespoons butter
- 1 teaspoon cinnamon
- 1 tablespoon + 1 teaspoon cornstarch
- 2 tablespoons water
Instructions
- Apples can be peeled, cored, chopped, or sliced.
- Melt cinnamon and butter over medium heat. Add apples, sugar, and water; stir.
- For 4-6 minutes, or until very little softened, cover the pan and cook while stirring from time to time.
- Combine cornstarch and 2 tablespoons of water in a small dish. Add to the pan while stirring, and heat until the filling has thickened and the apples are tender but not mushy.
- 1 minute of bubble time. Cool.
Notes
Slice or chop apples into 1/2-inch cubes.
Various apple types may require less (or more) cooking time. Check the apples with a fork after cooking them just until crisp and tender.
There are juicier apples than others. Add 1 tablespoon of cornstarch and 1 tablespoon of water to the filling to make it thicker. As the mixture boils, gradually add until the desired consistency is reached.
