Instructions For Yuca Fries
- Cook yuca for 20 minutes or until fork tender in a large pot of boiling water. Drain and set aside to cool until you can handle it. Cut cooked yuca into 12-inch-thick, 4-inch-long strips, discarding the fibrous core.
- In a large pot, heat the vegetable oil to 350 degrees Fahrenheit over medium-high heat. Drop the yuca carefully into the oil and fry for 5 minutes or until crispy, then drain on paper towels.
- After all of the yuca has been fried, season the fries with salt and other spices, and serve immediately.
