Important Ingredients
Shredded Chicken — To cook and shred my chicken, I used this incredibly simple Instant Pot method. Any shredded chicken will work in this recipe, though!
The chicken adds a nice texture to the dish as well as a healthy dose of protein. If you want, you can dice your chicken into bite-sized cubes for this recipe instead of using chopped chicken.
Fire Roasted Diced Tomatoes — A can of fire-roasted diced tomatoes adds a smokey touch to this Mexican chicken stew. If you can’t get fire-roasted tomatoes, a can of ordinary diced tomatoes can be substituted.
Shredded Mexican Cheese – Mexican cheese blends are often made up of Monterey Jack and cheddar cheese. You can blend those two kinds of cheese on your own and use them in this recipe if you like!
Also, an extra dusting of queso fresco on top of the cheeses in this meal would be fantastic.
Chef’s Advice
- Allow approximately 10-15 minutes of cooling time before slicing and serving the Mexican chicken dish! Casseroles have a tendency to trap heat and are inedibly hot right out of the oven. Before slicing, the filling will need to set for a few minutes.
- Simply leave out the chips, beans, and corn to make this casserole low-carb! This recipe is great even without those things. If you choose this option, I recommend adding some extra cheese to make it even more delicious!
- This Mexican chicken casserole can be frozen for up to a month before baking! To do so, follow the recipe’s instructions, then cover with plastic wrap and freeze. Remove from the freezer to defrost before baking for 30-35 minutes at 350 degrees Fahrenheit.

Ingredients
- 4 cups cooked and shredded chicken
- 1 (15-ounce) can of black beans drained and rinsed
- 1 can of fire-roasted diced tomatoes
- 3 cups crushed tortilla chips
- 1 (15.25 ounce) can of corn drained
- 1 (4-ounce) can dice green chiles
- 2 cups shredded Mexican cheese blend
- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon cumin
- fresh cilantro for serving

Instructions For Mexican Chicken Casserole
- Preheat the oven to 350°F and butter a 13×9-inch baking dish lightly.
- Using a large mixing bowl, combine the shredded chicken, black beans, diced tomatoes, corn, diced green chiles, salt, garlic powder, and cumin.
- Half of the crushed tortilla chips go on the bottom of the baking dish, then half of the chicken mixture goes on top.
- Sprinkle half of the cheese over the chicken mixture, then repeat the layers until no ingredients remain.
- Bake for 25-30 minutes, or until golden brown and bubbling cheese.
Notes
- Gluten-Free Option: Use corn tortilla chips and make sure that none of the other items contain gluten.
- Make it Dairy-Free: Replace the usual cheese with 2 cups of dairy-free cheese, or leave it out entirely!
