When they are on sale, I like to buy a shrimp ring for this recipe and chop the shrimp up when guests arrive.

It doesn’t take very long to cook the shrimp if you need to. Each shrimp will develop a bright pink color and curl up when they are finished cooking.

Even without thawing, you can cook shrimp right from the freezer! This is how to prepare frozen shrimp.

  1. Three quarts or so of water should come to a full boil.
  2. Add the entire frozen shrimp, including the peels.
  3. As the water starts to boil again, wait. It’ll take roughly four to five minutes.
  4. The shrimp should then be cooked for a further two to four minutes, depending on their size. Avoid overcooking! Peel after draining and allowing to cool.

Use thawed jumbo shrimp with the peel on to make the grilled shrimp salad. Grill on the cooler side of the grill for about 2 minutes per side after brushing with oil.

  • 1 pound medium shrimp cooked, peeled, and chilled
  • 2 stalks of celery diced
  • 1 green onion finely diced
  • 2 hard boiled eggs finely diced
  • ½ long English cucumber finely diced
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh lemon juice
  • ½ cup mayonnaise
  • ½ teaspoon Old Bay Seasoning
  • 1 ½ teaspoon grainy dijon mustard
  • salt & pepper to taste
