They keep for about a week in the fridge, so they’re ideal to give as gifts if someone else is hosting.
The Best Way to Make Keto Buckeyes
Here are some ingredient options for making delicious goodies with the fewest carbs:
- Use the lowest carbohydrate peanut butter you can find. I’ve found that Santa Cruz Organic Dark Roasted Peanut Butter has the fewest carbohydrates and contains no additional additives or sugar.
- One bag of Swerve Confectioners is 12 ounces unless you get the super enormous ones. This recipe calls for 16 ounces of Swerve, which equals 13 bags. Before you begin, double-check that you have enough!
- I’ve found Lily’s Semisweet Chocolate Chips to be the lowest in carbohydrates. However, feel free to use your favorite chocolate in this recipe!
Chef’s Advice
- To get your peanut butter balls the same size, use a tiny cookie scoop. This technique is made so much easier with one that has a releasing handle!
- You can use a microwave or a bain-marie to melt the chocolate.
- The Buckeyes will set in the fridge for about 30 minutes.
- These snacks will last up to a week in an airtight jar in the fridge.

Peanut butter balls dipped in chocolate are a keto spin on classic buckeyes. Perfect for the holidays and Christmas.
Ingredients
- 1 ½ cups creamy peanut butter see Notes
- ½ cup butter softened
- ½ teaspoon vanilla extract
- 16 ounces Swerve Confectioners note that this is 1 ⅓ bags if using 12-ounce bags
- 9 ounces Lily’s Semi-sweet Chocolate Chips one bag
- 1 tablespoon coconut oil
Equipment

- Cookie scoop (optional)
- Microwave safe bowl
- Silicone spatula
- Toothpicks or fork
- Baking sheet lined with parchment paper or wax paper
Instructions For Keto Buckeyes
- Peanut butter, butter, vanilla essence, and Swerve confectioner’s sugar are mixed together. Roll into 1-inch diameter balls, chilling if necessary to roll.
- In a medium mixing bowl, combine chocolate chips and coconut oil. Microwave for 60 seconds, then thoroughly stir. Microwave in 30-second increments, swirling thoroughly in between until chocolate is smooth and melted.
- Place a toothpick in each peanut butter ball and dip it into the melted chocolate mixture, leaving only a naked circle at the top. Dip peanut butter balls with a fork instead.
- Place on a wax or parchment paper-lined baking sheet. Remove toothpicks from buckeyes while still soft and spread peanut butter to cover the toothpick hole. Place the baking sheet in the refrigerator to harden.
