I’ve been preparing this simple turkey noodle soup for years and years! In a wonderful tomato broth, rotini noodles are served with tender turkey and vegetables.

One of our all-time favorites and the ideal way to eat leftover turkey is this homemade turkey noodle soup!

I usually make sure to cook a large enough turkey when I prepare a large turkey meal in order to account for leftovers. With leftover turkey, you can prepare everything from soups and casseroles to quick pasta salads with turkey for lunch.

Who doesn’t love a wonderful turkey soup made from leftovers once the protein has been cooked? The remainder of the meal just seems to come together so quickly and easily.

Turkey noodle soup is up there towards the top of my fave leftover recipes! It really feels fantastic to eat food that has so many wonderful flavors!

My family can’t get enough of this soup, which is another one I prepare that I make in the slow cooker and that everyone loves.

Old-fashioned turkey soup with a little bit of extra flavor is what this soup is! Nothing extravagant, bizarre, or outlandish; simply delicious, traditional flavors that we adore!

Making the Best Homemade Turkey Soup: Some Tips

  • Making your own turkey broth is simple and delicious if you have the time.
  • Replace the noodles with cooked wild rice or quick rice.
  • Use any vegetables you have, including any that are left over. Add them in the last few minutes if they have already been cooked so they may be heated.
  • Fresh herbs really bring the flavor to life. All of them, with the exception of rosemary, ought to be added just before serving.
  • Water and bouillon make a fantastic alternative if your stock of broth is low.
  • For a great flavor, I always add a dash of poultry seasoning to chicken or turkey soups.
  • To add a little spiciness, replace the ordinary canned tomatoes with a can of tomatoes that also contains green chilies.

I start with a traditional combination of sautéed onion, celery, and carrot. Flour and seasonings are added to the soup to give it a slightly creamy texture.

After that, stock, canned tomatoes, and leftover turkey are cooked together to provide a delightful flavor with a hint of zing.

The final step is to add the noodles and cook them through. Any medium-sized noodle would work well in this dish; however, I like rotini.

The noodles in this soup take a little longer to cook than they would in water, so keep that in mind.

The outcome is the tastiest turkey soup ever! For a quick supper that fills me up, we serve this with a side salad and my favorite 30 Minute Dinner Rolls.

Ingredients for Turkey Noodle Soup

  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 large onion diced
  • 2 whole carrots sliced
  • 4 celery stalks sliced
  • 2 cloves garlic minced
  • ¼ cup flour
  • 2 teaspoons Italian seasoning
  • 6 cups chicken broth low sodium
  • 1 can petite diced tomatoes 14 ½ ounces
  • 3-4 cups cooked turkey
  • 6 ounces dry rotini noodles

  1. Over medium heat, cook onion, celery, carrots, and garlic in butter and olive oil for about 5 minutes, or until softened.
  2. Seasonings and flour are stirred in. 2 minutes to cook.
  3. Add the turkey, tomatoes, and broth. Bring to a boil, then lower the heat and cover the pot to simmer for 35–40 minutes.
  4. Remove the cover, then add the rotini. Cook the pasta for 15 to 20 minutes, or until tender.
