Ingredients
- 2 cups fresh tortellini (meat or cheese filled)
- 1 cup fresh chopped spinach (uncooked) optional
- Fresh Basil for garnish

- 28 oz diced tomatoes canned with juice
- 2 cups Progresso™ Chicken Broth
- 2-3 teaspoons sugar or to taste
- ¼ teaspoon garlic powder
- ½ teaspoon onion powder
- 1 cup heavy cream or
- 2 cans Progresso™ Vegetable Classics Tomato Basil Soup
Instructions
- In a saucepan, combine all the soup ingredients minus the cream. Bring to a boil, then lower the heat and simmer for eight minutes.
- Cook the tortellini as directed on the package in the meanwhile. Thirty seconds before the tortellini being done, add chopped spinach to the boiling water. Good drainage
- Utilizing a hand blender, puree the soup mixture. Five more minutes of simmering after adding the heavy cream.
- If using, add the tortellini and spinach.
- If preferred, add fresh basil and parmesan cheese after placing them in serving bowls.
