This is a special dish because Penny, my BFF, invented the recipe and has been cooking it for years. She always makes this simple weeknight supper, so I had to give it a shot.
I’ll admit, when I first prepared it, I was sure it would be great, but I had no idea what I was getting myself into. It quickly became a staple in our menu.

One of the things that makes this simple Chicken Rice Casserole kind of the perfect recipe is that it just has to bake for about an hour (depending on your oven, you may need a few more minutes, but for me, it’s around an hour).
Every time we’ve cooked it, we’ve followed the recipe exactly, but I’ve also added a little onion or a few handfuls of fresh mushrooms to the bottom of the pan.
You can throw this dish into the oven with very little preparation time and then relax or perhaps assist with schoolwork without experiencing the normal dinnertime hustle.
Five minutes of labor, followed possibly by a glass of wine or an hour of reading? That seems like a wonderful plan for EVERY weekday!
In this recipe, I use homemade onion soup mix, but if you haven’t had a chance to make your own yet, you can use the sort in the envelope. In either case, the flavor will be fantastic!
Additionally, according to my friend Penny, depending on what she has on hand, she occasionally swaps out the onion soup mix with a packet of gravy mix!
If you’re fortunate enough to have any leftovers, you can have this for lunch the next day.
Rice and Chicken Casserole

Ingredients for Chicken Rice Casserole
- 4 chicken breasts
- 1 cup long grain white rice uncooked
- 1 ½ cups water
- 10 ounces cream of mushroom soup condensed
- 1 package onion soup mix or use homemade
Instructions
- Set the oven to 325 F.
- Spray cooking oil in a 9×13 pan. Chicken breasts should be added along with salt and pepper.
- Over the chicken, place uncooked rice. Add some onion soup mix.
- 1 1/2 cups of water and mushroom soup should be combined. Add to the chicken.
- Bake the rice covered for 1 hour 15 minutes, or until it is soft.
Notes
Although my casserole always takes one hour and fifteen minutes to prepare, it may take an additional 25 minutes according to your factors.
