Breakfast potatoes with great seasoning that are simple to make! The potatoes for this delicious breakfast side are roasted in the oven on a sheet pan until they are wonderfully crisp and golden brown on the exterior and light and fluffy on the inside.
Simple Breakfast Potatoes Baked
My new go-to method for making homemade breakfast potatoes is this one!
Here, creamy red potatoes are sliced into small chunks and roasted in the oven at a high temperature on a baking sheet with fragrant seasonings and a significant amount of olive oil (which promotes browning and makes them richer).
Then, for a little period, they are finished under a very hot broiler to enhance their external texture and add color. Because the ideal kind of breakfast potatoes are crispy potatoes with a soft and tender interior!
You’ll like not having to watch over potatoes frying in a skillet on the stovetop when using this straightforward technique (while constantly monitoring and frequently stirring).
However, in this case, the oven handles most of the work with only the occasional tossing.
My preferred method of serving these is with plenty of sriracha ketchup for dipping.
Simply combine ketchup and sriracha to taste (desired heat level). It’s one of the simplest and tastiest toppings, and it pairs perfectly with plain potatoes.

- 5 large, 2 1/2 lb. red potatoes, cut into a little larger than 1/2-inch cubes
- Olive oil, 1/3 cup
- 1 teaspoon each of salt and pepper, plus more to taste
- 3/4 teaspoons of paprika and garlic powder
- 1/8 teaspoon of onion powder
How Do You Make Breakfast Potatoes Crispy?
- Prepare a baking sheet and preheat the oven: The oven should be heated to 450 degrees. Apply nonstick cooking spray to a baking sheet with a rim that measures 18 by 13 inches.
- Place potatoes in a mound in the middle of the baking sheet and drizzle with oil. Add a drizzle of olive oil.
- Sprinkle salt, pepper, garlic powder, paprika, and onion powder over the potatoes and toss to coat. Stir well to cover everything with oil and seasonings.
- Bake potatoes spread out on a baking sheet: Arrange potatoes in a single layer that is even. 15 minutes of baking in the center of a preheated oven
- Toss the potatoes and keep baking: Take out, toss, and bake for another 15 minutes or so, or until just tender.
- Shortly broil potatoes: Reposition the oven rack 5 inches away from the broiler. Potatoes should only be placed in the broiler for 2 to 3 minutes when they are just beginning to brown.
- Toss and continue to broil if required for further browning: After removing and tossing, broil for another minute or so, or until the other side is crisp and golden brown. Serve hot.
Variations
- Red potatoes can be substituted with Yukon gold potatoes.
- Test out different herbs or seasonings.
- If you’d like, you can peel the potatoes.
- To make garlicky breakfast potatoes, add some minced garlic toward the end.
- For cheesy breakfast potatoes, add cheddar cheese in the last few minutes of cooking.
- Make breakfast tacos or burritos with these potatoes.
Practical Advice
- Before putting the potatoes in the oven, make sure it is preheated to the appropriate temperature.
- Potatoes should be diced evenly to ensure equal baking and timely completion (otherwise some may be too hard or too soft).
- Not attempt to minimize the oil. It maintains the potatoes’ dryness. When roasting or frying potatoes, a good amount of fat is required.
- Make sure to throw. They won’t cook and brown evenly if you don’t.
- They must be well-seasoned with salt to avoid tasting bland.
How Are Breakfast Potatoes Reheated?
- A 400-degree oven is recommended.
- On a baking pan, distribute the potatoes and cover them with foil.
- For 10 to 15 minutes, roast until thoroughly cooked; if necessary, stir with a little olive oil if they appear dry.
