Given its bland flavor and accessibility, dry, thin spaghetti is an excellent option.

My go-to option is yakisoba. They can be found in some grocery shops’ refrigerated packaged foods in the produce area (I buy Fortune brand at Kroger).

Although they are more difficult to locate in the US, fresh chow mein noodles (Hong Kong-style noodles) are a decent alternative.

Several Asian grocery stores carry them. Since they are less greasy and don’t have a mildly sour flavor, I like the yakisoba here better.

drab spaghetti. This is what I’ve done, and it also works well here. It has a comparable texture and an unremarkable flavor. Both regular and thin will do.

It will also work to use dry Chicken Chow Mein Recipe (not the crispy crackers obviously).

I couldn’t comment because I haven’t tried it yet, but I imagine it’s comparable to the spaghetti choice (but made with wheat flour vs. semolina).

Do You Allow Other Vegetables?

Although I prefer the traditional vegetable mix used here, you can substitute other vegetables you might already have on hand, such as water chestnuts, snow peas, bell peppers, or bean sprouts.

Should I Use Oyster Sauce?

The sauce simply gives the dish a lovely depth of flavor; don’t worry that the completed product will taste like oysters.

If I don’t have any in the fridge, I’ve substituted hoisin sauce; if you insist on skipping it, use hoisin instead. Although they have very different tastes, both will give a deliciously rich flavor.

  5. Stirring occasionally, add celery to skillet with remaining 1 Tbsp oil and cook for 3 minutes.
  6. Add the cabbage and cook for two minutes. Next, add the carrots, green onions, garlic, and ginger and cook for an additional one to two minutes, or until the vegetables are crisp-tender.
  7. Noodles and chicken should be combined before the soy sauce mixture is added. Serve hot.

Notes

  • *8 oz. of dry spaghetti, either thin or ordinary, works well as well.
  • **Chicken thighs will also work well. Cook for a couple of extra minutes if necessary.
  • When I don’t have oyster sauce, I’ve also made this dish with hoisin sauce. Despite having quite different flavors, they both have wonderful flavors.
