INGREDIENTS

  • 1 large cauliflower chopped into florets, leaves, and stalk removed and discarded
  • 1 tbsp extra-virgin olive oil (or coconut oil)
  • 1 onion, chopped
  • 2 scallions (green onions/shallots), sliced finely
  • 2 garlic cloves
  • Juice 1 lime (1/8 cup lime juice)
  • 1/4 cup fresh chopped cilantro
  • Salt and pepper, to taste

INSTRUCTIONS

  1. Working in batches, add 1 cup of cauliflower florets to a blender (or food processor) and pulse each batch fast about 3-5 times, or until the cauliflower resembles rice. Repeat with the remaining cauliflower until all has been prepared, then transfer to a large bowl.
  2. Over medium heat, preheat a large skillet or nonstick pan. On low to medium heat, add the olive oil, onions, scallions (scallops), and garlic. Sauté for about 3 minutes, or until tender and fragrant.
  3. Add the cauliflower “rice” and season to taste with salt and pepper.
  4. Heat the stove to a high setting. Stir the mixture and heat, stirring regularly for about 6 minutes, or until the cauliflower is tender-crisp. Add the lime juice and cilantro (soft on the inside; crispy on the outside).
  5. Serve!
