It’s much better to create your roasted bell peppers if you prefer.
- Simply place the bell peppers on a grill or stovetop burner over a flame until they are blackened and bubbling.
- To remove the bell pepper skin, place the bell peppers in a large basin and cover them with plastic wrap.
- Before placing it in a glass Tupperware, remove the skins and internal seeds.

INGREDIENTS
- 1 cup roasted red bell peppers divided
- 2 cups tomato sauce
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon sugar
- 1/2 teaspoon crushed red pepper flakes
- 5 each chicken thighs
- 1/2 teaspoon Kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1/2 cup artichoke hearts
- 1/2 cup kalamata olives
INSTRUCTIONS
- Half of the roasted bell peppers, tomato sauce, oregano, basil, sugar, and red pepper flakes should be pureed in a small food processor.
- Place the skin-side up chicken thighs in the slow cooker.
- Around the chicken pieces, add the remaining roasted red peppers, olives, and artichokes.
- Along the side of the pan and over the chicken pieces, pour the sauce.
- Cook for 4-5 hours on high or 7-8 hours on low.
