It’s quick and simple to make, and it goes great with everything from tacos to dipping fries! We always keep a jar of this condiment in the fridge.

  • The flavor is fantastic! It’s almost impossible to describe how amazing chipotle mayo is. It’s creamy and tangy, with chipotle spice and a citrus burst. This is the sauce you’ve been looking for if you’ve ever had Mexican food and wondered what it was.
  • It’s quite simple to make, and you can easily double or quadruple the recipe. Mayonnaise, lime juice, chipotle peppers, adobo sauce, garlic, and salt are the only ingredients. Blend everything together in a blender. Refrigerate the mayonnaise in an airtight jar for up to ten days!
  • Chipotle mayo pairs well with almost anything! Seriously. Use it as a dipping sauce for French fries or onion rings, or add it to burgers or burger bowls, burritos, nachos, or fish tacos!

Mayonnaise – You can use any sort of mayonnaise in this recipe. However, I recommend using full-fat mayonnaise.

To compensate for the absence of fat, low-fat choices sometimes include added sweets, and the extra processing can remove some nutrients. If you prefer, sour cream could be substituted. Use a vegan mayonnaise to make a vegan chipotle mayo!

Chipotle pepper- Start with half a chipotle pepper if you’re new to chipotle peppers, or if you’re not sure how spicy you want your mayo to be. You can always add more to increase the heat.

If your chipotle mayo becomes too spicy, add a little extra mayo to cool it down. Skip the pepper and just use 1-2 tablespoons of adobo sauce for a fairly mild chipotle mayo.

Adobo Sauce — This is a true two-for-one ingredient. Chipotle peppers are often found in a can of adobo sauce, and that’s exactly what you’ll need for this chipotle mayo!

Although I just used 1 teaspoon, you can use as much as you want. Simply add it in little increments, tasting as you go to ensure you haven’t overdone it.

Chef’s Advice

  • The finest flavor comes from chipotle peppers in adobo sauce, but if you don’t have any on hand and want to prepare a batch of chipotle mayo before your next grocery store, use chipotle powder instead! Start with 12 teaspoons (without the chipotle pepper or adobo), taste, then adjust as needed.
  • Use fresh lime juice if possible. It tastes so much better and brighter than the bottled version, in my opinion! Of course, bottled water will suffice.
  • Add a pinch of smoked paprika for added depth of flavor. The chipotle peppers and adobo sauce add a rich smokiness to the chipotle mayo on their own, but the added taste from the smoked paprika is welcome!

  • 1 big pinch of salt plus more to taste
  • 1 small clove of garlic optional
  • 1 whole chipotle pepper from a can of chipotle peppers in adobo sauce, see Notes
  • 1 teaspoon adobo sauce from a can of chipotle peppers in adobo sauce

  1. In a blender, combine all ingredients and blend until fully smooth. Taste and make any necessary adjustments. Serve immediately or chill until ready to serve. To make a bowl and whisk: Chipotle pepper should be finely chopped, and garlic should be minced. Whisk together all of the ingredients in a mixing bowl. Taste and make any necessary adjustments. Serve immediately or chill until ready to serve.
    In a blender, combine the ingredients for the chipotle mayo.

Notes

  • Chipotle Powder: In place of the chipotle pepper and adobo sauce, you might use 12 teaspoons of chipotle powder (plus more to taste).
  • Veganize it: Make your mayonnaise vegan.
