INGREDIENTS
French Toast Bake:
- 1 x400g | 14oz loaf Brioche, evenly sliced
- 3/4 cup pitted dates, roughly chopped
- 4 large eggs
- 2 1/2 cups milk (low fat or full cream, or almond milk)
- 1/3 cup brown sugar (or coconut sugar)
- 1 teaspoon pure vanilla extract
- 1 teaspoon ground cinnamon (optional)
- Pinch of salt (about 1/4 teaspoon)
Butterscotch Sauce:
- 1 cup brown sugar
- 3 tablespoons butter or spread of choice (I used an olive oil spread)
- 150 ml | 1/2 cup thickened cream (heavy cream or coconut cream)
- 1/4 cup pitted dates, roughly chopped
- 1/4 cup boiling water (optional)
INSTRUCTIONS
- Heat the oven to 200 °C (390 °F).
- Apply cooking oil spray or a thin layer of butter to a 28×23-cm | 9×11-inch casserole dish to lightly grease it. Place the bread slices in the dish, followed by the dates, which should be arranged around, beneath, and between the bread slices.
- When thoroughly blended and foamy, whisk the eggs, milk, brown sugar, vanilla, cinnamon (if using), and salt. Over the bread, pour the egg wash. To uniformly coat the bread, lightly press it into the egg wash.
- Bake in a hot oven until well heated and brown on top (about 40-45 minutes).
- Make sauce while the french toast is baking.
- In a medium saucepan over low heat, mix the sugar and butter.
After about two minutes, when the mixture is hot and steaming, add the cream in little amounts, stirring after each addition, until all of the creams are in the pan. Stir occasionally to ensure that the brown sugar has completely melted into the butter. Dates are then added, and the sauce is allowed to foam and bubble while being stirred intermittently. The sauce should have thickened and the dates should be tender after around 8 minutes. Turn off the heat and give it a moment to cool. Until you achieve the appropriate consistency, add 1 tablespoon of boiling water at a time, stirring after each addition. - Slices should be served with softened date pieces and a drizzle of butterscotch!
