For years, I’ve had a mushroom gravy recipe on my to-do list. “What took me so long?!” I exclaim after attempting this one. This mushroom gravy is velvety smooth and full of flavorful flavor.

It’s completely vegan, yet it’ll give any meat or butter gravy a run for its money. I devour a couple of spoonfuls directly off the pan every time I prepare it.

That’s how good it is! Once you’ve tried it on mashed potatoes, you’ll never want to eat them any other way.

Only a few simple items are required for this mushroom gravy recipe:

  • Of course, mushrooms! They give this mushroom gravy recipe a meaty texture and umami taste.
  • Garlic and shallots – For a flavorful, pungent depth of flavor.
  • Tamari or soy sauce — If you’ve tried my veggie burgers or sautéed mushrooms, you know how much I love tamari. It truly brings out their flavorful, deep flavor. You can use soy sauce instead of tamari, but if you want this gravy to be gluten-free, use tamari.
  • These herbs, rosemary, and thyme elevate this vegan mushroom gravy to new heights! It’s intimate and sophisticated thanks to its fresh, aromatic aromas.
  • All-purpose flour – This thickens the gravy nicely. (For a gluten-free version, see the recipe below.)
  • Vegetable stock — This adds substance to the gravy.
  • For richness, use extra-virgin olive oil.
  • Also, a pinch of sea salt and freshly ground black pepper to bring out the flavors!

This mushroom gravy reheats beautifully, so feel free to make it ahead of time. Because it thickens as it sits, you’ll probably need to add a splash of water or broth while reheating it.

Add a bit at a time until the gravy is the consistency you want. Season to taste with salt and pepper, and enjoy!

Serving Suggestions for Mushroom Gravy

This mushroom gravy would be an excellent addition to any Thanksgiving or holiday meal. I prefer it with traditional sides like stuffing and roasted Brussels sprouts, but it’s finest with mashed potatoes, as with any good gravy recipe. Serve it over my usual roasted garlic mashed potatoes, or try a different mash.

My mashed cauliflower or parsnip puree would be excellent with this vegan mushroom gravy.

If you have any leftovers, add some cooked white beans to the gravy and serve it over creamy mashed cauliflower for a complete meal!

In fact, I enjoy this combo so much that I eat it for dinner all fall and winter. It’s filling, healthful, and cozy when served with handmade focaccia or crusty toast.

With this rich, flavorful, you can take your mashed potatoes to a whole new level! This garlic mashed potatoes, as well as my mashed cauliflower and parsnip puree, are delicious with it. Vegan.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 shallot, finely chopped (⅓ cup)
  • 16 ounces cremini mushrooms, sliced
  • ½ tablespoon tamari
  • 2 garlic cloves, minced
  • 1½ tablespoons fresh thyme leaves
  • ½ tablespoon chopped rosemary
  • ¼ cup all-purpose flour
  • 3 cups vegetable broth
  • Sea salt and freshly ground black pepper

  1. In a large skillet, heat the olive oil over medium heat. Cook until the shallot is tender, about 4 minutes.
  2. Cook, stirring occasionally, until the mushrooms are tender, about 8 to 10 minutes. Combine the tamari, garlic, thyme, and rosemary in a mixing bowl. 1 minute after sprinkling the flour over the mushrooms, mix it in.
  3. Cook, whisking often until the broth has thickened, about 20 minutes. To taste, season with salt and pepper.

Notes

  • To make this recipe gluten-free, follow these steps: In step 2, leave out the flour. Pour a few teaspoons of the liquid into a small bowl at the conclusion of step 3. Stir with 2 tablespoons cornstarch until smooth. Return the ingredients to the pan and continue to whisk until the gravy thickens.
