- Stop mixing once the steak and veggies have risen to the top of your saucepan. When you get to walk away for 90 minutes before returning to a truly flavorful consommé, this is my personal favorite portion of the process!
- When filtering, try not to disturb the sediments at the top of the broth. The way the beef consommé is clarified is what makes it so distinctive. As a result, maintain the liquid as separate as possible to avoid a murky soup.
- Refrigerate this consommé for up to three days in sealed containers. You can drink it or use it in your favorite soup recipes. You can also freeze your clarified broth for up to three months in sealed containers.

Ingredients For Beef Consommé
- 4 egg whites
- 1 pound lean ground beef see Notes
- 1 cup onion chopped
- ½ cup carrots chopped
- ½ cup celery chopped
- 1 cup tomatoes diced
- 5 quarts beef stock cold
- 2 bay leaves
- 1 sprig fresh thyme
- 2 teaspoon salt

Instructions
- In a mixing dish, whisk egg whites until foamy.
- In a large pot, combine egg whites, ground beef, onion, carrots, celery, and tomatoes.
- Mix in the chilled beef stock thoroughly. Add the bay leaves, thyme, and salt to taste.
- Simmer for 10 minutes, stirring occasionally. Once the beef and veggies have stiffened and risen to the top, stop stirring. Make a small hole in the beef mixture and leave it to cook for 90 minutes without touching it.
- Remove the saucepan from the heat and strain through a mesh strainer lined with cheesecloth once the cook time is complete. Remove the solids and serve the beef consommé immediately.
