This hefty, custardy-cooked apple pancake transports me immediately to my younger years. For a nice finishing touch, sprinkle some powdered sugar over it. Now dive in!
I used to nag my mother for items like Fruity Pebbles and Frosted Flakes with my sister. She didn’t give in very frequently, but I can recall the few times she did.
If I purchase this, are you going to eat it this time? she’d sigh. We would nod and smile, anticipating getting the same vibrant boxes our friends had.
We might each eat half a dish. Then it would go up in the pantry, where it would gather dust before eventually being thrown out during the subsequent pantry clean-out.
We would beg again after seeing the happy children in the Saturday morning advertisements, and we would work SO HARD to like the product. Blue milk and sugary soggy flakes, however, were not for us.
Especially because our usual morning rotation included homemade muffins, pancakes, eggs, doughnuts, and this German-inspired apple pancake.
This was a regular in our upbringing, and my mother still prepares it whenever she comes to visit.
An egg mixture is placed on top of softened apples, brown sugar, and cinnamon in a pan with butter. The texture is less like a regular doughy pancake and more like a custard because of the thin egg layer and pillowy apples.
Serve hot slices straight out of the pan after baking until it puffs up.
Apple Pancake
Serves: 2 to 3 |
For a weekend brunch, try this delicious apple pancake. It has a creamy, custardy feel unlike a typical pancake and is excellent with powdered sugar on top.
Ingredients
- 2 tablespoons butter (or vegan earth balance)
- 3 apples, peeled, cored, and sliced
- ¼ cup brown sugar
- ½ teaspoon cinnamon
- 3 large eggs
- ½ cup almond milk (or regular milk)
- 2 tablespoons flour (any kind: white, wheat, spelled*, or a gluten-free blend)
- ¼ teaspoon baking powder
- Powdered sugar, for dusting (optional)
Instructions
- Set the oven to 375 degrees.
- Combine cinnamon and brown sugar.
- Combine milk and eggs in a bowl.
- Flour and baking powder should be combined, then added to the egg and milk combination.
- Melt the butter in a skillet over medium heat. Stir in 1 tablespoon of the brown sugar mixture and the apple slices, cooking and stirring until tender. five minutes or so.
- The remaining brown sugar should be sprinkled on top after you pour the batter over the apples.
- Bake for 18 to 20 minutes, or until it puffs up.
- Sprinkle with some confectioners’ sugar.
