It only needs 7 ingredients and a basic Greek salad dressing to make it delicious and refreshing.

I enjoy a good green salad, and kale, romaine, and mixed greens are some of my go-to ingredients for making light, nutritious dishes. However, all vegetables are at their best during the summer.

There are lots of sweet, juicy tomatoes, tangy bell peppers, and fresh cucumbers. Without any greens to obscure them, this Greek salad recipe makes the most of these vegetables.

The best part, too? This Greek salad dish only requires a few ingredients and is tasty and refreshing because the vegetables are at their best.

There are only 7 ingredients total, plus a simple homemade Greek salad dressing.

Over the past few weeks, it has become a favorite at our family gatherings; my mother even added it to her regular recipe rotation. I sincerely hope you enjoy it as much as we do!

Cucumber, tomato, green bell pepper, red onion, olives, and feta cheese are all common ingredients in a Greek salad. I continue to use this tried-and-true combo since it’s excellent, merely completing it with a few mint leaves for a new look.

The Kalamata olive is my preferred variety. They are frequently used in Greek cuisine, and the feta and crunchy vegetables go perfectly with their salty, saline flavor.

Cherry tomatoes release less water into the salad than larger tomatoes would, so I use them instead of chopping them. Additionally, I seed my cucumber to keep my salad from becoming too wet.

Make sure to cut your components into portions that are equal in size so that a superb salad will have a tasty jumble of vegetables, olives, and cheese in every bite. Instead of crushing the feta, I prefer to purchase pitted Kalamata olives and consume them intact.

The cucumber and cherry tomatoes are simply sliced in half, the bell pepper is cut into 1-inch squares, and the cucumber is cut into thin half-moons.

MY GREEK SALAD DRESSING

I combine the feta cheese, olives, and vegetables with a quick homemade Greek salad dressing. It’s quite easy to whisk up and adds a vibrant, zingy taste to this straightforward Greek salad recipe.

All you need are five simple ingredients plus salt and pepper. Simple ingredients include olive oil, red wine vinegar, Dijon mustard, garlic, and dried oregano.

I prefer to generously add oregano and black pepper to my salad as a garnish in addition to using them in the dressing.

SERVING IDEAS FOR GREEK SALAD

This salad is perfect to prepare ahead of time for gatherings because it doesn’t contain any delicate greens. I prefer to keep a few fresh mint leaves to add immediately before serving if I’m preparing it ahead of time.

It’s also a great supper side. Enjoy it with a summer pizza like this or this, pasta with pesto, spaghetti with roasted vegetables, or large veggie lasagna.

If you want to change up this salad dish, consider using a combination of red, green, and yellow bell peppers, adding some fresh oregano or parsley, or incorporating cooked or roasted chickpeas to turn it into a meal.

Skip the cheese and substitute 3/4 cup of cooked chickpeas and 1 tablespoon of capers for it to make it vegan.

DRESSING

  • 1/4 cup extra virgin olive oil
  • 3 tablespoons red wine vinegar
  • 1 garlic cloveminced
  • 1/2 teaspoon dried oreganomore for sprinkling
  • 1/4 teaspoon Dijon mustard
  • 1/4 teaspoon sea salt
  • Freshly ground black pepper

FOR THE SALAD

  • 1 English cucumbercut lengthwise, seeded, and sliced ¼-inch thick
  • 1 green bell pepperchopped into 1-inch pieces
  • 2 cups halved cherry tomatoes
  • 5 ounces feta cheesecut into 1/2 inch cubes*
  • 1/3 cup thinly sliced red onion, pitted Kalamata olives, and fresh mint leaves

  1. Creating the dressing. Mix the olive oil, vinegar, garlic, oregano, mustard, salt, and a few grinds of pepper in a small bowl.
  2. Place the cucumber, green pepper, cherry tomatoes, feta cheese, red onions, and olives in a sizable dish. Add the dressing and stir with extreme care. Top with the mint leaves and generously sprinkle oregano over them. Serve after flavoring to taste.
