Making french toast out of banana bread and slathering it in cream cheese icing is a cheater’s way to enjoy banana bread without really eating any banana bread.
You may wonder how one may effortlessly transform a plain piece of boring old bread into Banana Bread or French Toast. How? Read on!
How? This recipe is dated. like, aged I cheated on banana bread for the first time last year. This recipe went bonkers for months after I uploaded it to my Instagram feed.
In addition to the fact that we had a strong craving for it this morning, I took advantage of making it for the millionth time to improve and simplify it for the blog.
First. In a magic bullet (big cup) OR a regular blender, combine a banana with the standard french toast ingredients of egg and milk.
It transforms into a lovely, creamy, thick “batter” that you can use to coat the bread. Dip. Coat. Fry. Attempt one without collapsing.
No, that’s all. There is no need to create any banana bread and then wait for it to go bad before converting it to french toast. There is not enough time for that.
Pour this optional (but not optional) cream cheese icing on top…
Add banana slices and pecans to the top…
And take the most amazing ride of your life.
INGREDIENTS
French Toasts:
- 8 slices of bread of your choice
- 1 large banana
- 1 large egg
- 1/2 cup milk (reduced fat; normal milk or almond milk are fine)
- 1 tablespoon granulated sweetener or sugar of choice
- 1 teaspoon ground cinnamon
- 2 teaspoons pure vanilla extract
Cream Cheese Glaze
- 1/2 cup cream cheese
- 1/4 cup Greek yogurt (or any plain yogurt)
- 1/3 cup confectioners (or icing) sweetener/sugar
- *Banana slices and pecans to serve
INSTRUCTIONS
A French toast:
- Apply eggwash evenly to the bread.
- Fry bread that has been soaked until golden and browned on both sides over low heat in a skillet that has been heated with butter or cooking oil spray.
- Serve with banana slices, pecans, and cream cheese glaze. Cream Cheese Glaze:
- Use a hand mixer to whisk the glaze ingredients together in a bowl until it is smooth.
