  • With warm, wonderful aromas and enticing textures, keto beef stew is incredibly hearty and nourishing. The meat is cooked low and slow until it’s melt-in-your-mouth tender, and the broth thickens wonderfully (without any starches).
  • This meal is not just keto and low carb, but it is also healthy in general! The chuck roast is a terrific source of protein, and it’s served with a rich broth and numerous incredibly healthful vegetables.
  • It’s a great option for make-ahead meals or leftovers because it’s so simple to create. The next day, it might even be better! Allow it cool completely before storing in an airtight container. Important Ingredients For Beef Stew

Roast Chuck – This is the cut that, in my opinion, produces the finest results. Tender and juicy, with a melt-in-your-mouth texture that is neither tough nor chewy. The fantasy!

Not a lover of mushrooms? You may skip the mushrooms if you like. I enjoy the flavor they add, but this dish is equally delicious without them.

Tomato Paste — To keep this keto beef stew keto, make sure to use a tomato paste that doesn’t have any added sugar.

Any sugar in the can should come from the tomatoes alone, and even then, choose one with the fewest carbohydrates. You could alternatively dice your own whole tomatoes or use a can of crushed or diced tomatoes.

Store-bought beef broth is OK, but if you have the time, I recommend preparing your own! Bone broth produced at home contains a wealth of beneficial vitamins and nutrients, including collagen and protein.

It also has a stronger flavor. You can create bone broth using only chicken bones, solely beef bones, or a combination of both.

Chef’s Advice

  • There are a few things to keep in mind when searing the chuck roast for your keto beef stew. 1) Before adding the steak, make sure the oil is heated enough. 2) Make sure the pot isn’t overflowing. Every piece of meat must make constant contact with the dutch oven. 3) Avoid moving the beef around too much.
  • Do you crave potatoes in your stew? Serve it with mashed cauliflower on the side! As you can see in the images, I did just that, and it was DELICIOUS. Cauliflower florets, rutabaga, or radishes could be added to the keto beef stew.
  • When you sear the meat, it really comes out MUCH better if it’s at room temperature. The flesh can toughen upon impact if the meat is really cold and the oil is very heated. Allow it to rest out for about 20 minutes before cooking to allow it to warm up.

Ingredients

  • 2 pounds boneless, skinless chuck roast cubed
  • salt to taste
  • pepper to taste
  • 2 tablespoons avocado oil or other neutral oil, plus more if needed
  • 8 ounces baby Bella mushrooms quartered
  • 1 teaspoon fresh rosemary chopped
  • 2 stalks of celery sliced
  • 1 small onion sliced
  • 4 cloves garlic minced
  • 2 carrots sliced
  • 1 tablespoon tomato paste see Notes
  • 4 cups beef broth
  • 1 teaspoon fresh thyme chopped

Instructions For Beef Stew

  1. Season cubed chuck roast with salt and pepper on all sides.
  2. 2 tablespoons avocado oil, heated in a dutch oven over medium-high heat When the oil is hot, add the seasoned beef in batches to avoid overcrowding the saucepan. Sear meat for 2 to 3 minutes per side until browned on all sides.
  3. Set aside the browned chuck roast in a large mixing dish. If necessary, add extra avocado oil to the dutch oven. Add the mushrooms to the heated oil and fry until golden brown.
  4. In a dutch oven, combine the mushrooms, onions, celery, and carrots. Simmer for 4 to 5 minutes, then add the minced garlic and cook for another minute, or until fragrant.
  5. Tomato paste, beef broth, thyme, and rosemary are added to the pot. Stir the seared beef back into the dutch oven. Bring the mixture to a boil, then lower to low heat. Cook for 1 hour on low heat, covered until beef is tender. Warm stew can be served alone or with mashed cauliflower.

Notes

  • Paste of Tomatoes: You’ll need a tomato paste with no extra sugar and as few carbs as possible to maintain this keto.
  • Maintain a gluten-free environment: Make your own gluten-free beef broth or buy a gluten-free brand.
