INGREDIENTS

CHICKEN WINGS

  • 2 Kg (4 pounds) chicken wings cut into drumettes and flats
  • 1 tablespoon aluminum-free baking powder (NOT baking soda)
  • 1/2 teaspoon salt
  • 2 teaspoons garlic powder
  • Pinch of cracked pepper

BUFFALO SAUCE:

  • 1/4 cup unsalted butter, melted
  • 1/2 cup Frank’s Original Red Hot Sauce
  • 1-2 tablespoons honey, white sugar, or brown sugar (adjust to suit your tastes)

BLUE CHEESE DIP:

  • 1/2 cup crumbled blue cheese softened
  • 1/3 cup sour cream
  • 1/4 cup mayonnaise
  • 2 cloves garlic minced
  • 1 tablespoon lemon juice
  • Pinch of salt
  • Pinch of cracked black pepper

TO SERVE:

  • Ranch dressing
  • Blue cheese dressing (RECIPE AS ABOVE) for serving
  • Celery sticks for serving

INSTRUCTIONS

  1. Preheat the oven to 450°F (230°C) and set the oven rack in the upper-middle position. A heat-resistant wire rack should be placed within a baking sheet with a rim made of aluminum foil.
  2. Use paper towels to thoroughly pat dry chicken wings, squeezing out as much moisture as you can. Place them in a big bowl.
  3. Sprinkle the wings with the mixture after thoroughly mixing the baking powder, garlic powder, salt, and pepper in a small bowl. Toss the wings in the baking powder mixture to coat them completely.
  4. Leave a space of about 1 inch between each wing as you arrange it on the rack.
  5. After baking for 30 minutes, turn the baking sheet over, and cook for an additional 20 to 30 minutes, or until the food is crisp and golden brown.
  6. Stir together spicy sauce, butter, and sugar while the wings cook. To evenly coat the wings, toss them in the sauce.
  7. Serve the wings right away with celery sticks, ranch, or blue cheese dressing.
